Thai Chicken Pizza

As I sit here and write my tri-weekly recipe post today, a few things have transpired:

1. a black cat is sitting by my back door {located literally right next to my desk} and has started meowing. #eerie

2. Also, a spider the size of a squirrel came crawling out from under my stove. *induce vomiting now

My husband came to my rescue and killed the spider {haha, sucker!}, thus scaring the cat away.

And thus concludes another chapter in the book “I literally would die without him”.

What is the deal with the animal kingdom today?

THEY ARE TRYING TO KILL ME.

Yes, I realize spiders aren’t animals per say, but when they are the size of rodents, I think they can make the crossover.

There are not many things I hate more than spiders and snakes. Mayyyybe sweet pickles, but that would be pushing it.

And now my whole body feels itchy because all I can think about is that spider crawling all over me.

YOU GUYS. That is like the definition of heebie geebies! Gross gross gross. Someone stop the insanity that is my life.

Ok, and now comes my feeble attempt at changing topics.

I know I just said spiders and vomit, but lets talk pizza for a hot second, shall we?

I made this pizza and ate the whole thing with my husband for dinner two night ago. #notashamed It was covered in veggies so it was completely acceptable. I said it serves four in the recipes {which it totally could}, but my husband and I just happened to be starving. And this was out of this world delicious which made it hard to stop shoving into my pie hole.

I realize I say that for a lot of things, especially carbs, carbs with sugar, carbs with cheese, etc. but I……have a problem.

If eating carbs is wrong, I don’t want to be right.

Moral of the story: make this and DO NOT share. Also, spiders make me want to punch someone in the throat.

Here’s how to make it:IMG_0327

Grab about 1 lb. of pizza dough and spread it onto a baking sheet sprinkled with cornmeal. {Or just use parchment paper.} Spread some sweet chili sauce over the whole thing…as much or as little as you’d like.

Then top with grated cheese and some cubed chicken. {I had this left over from a previous dinner.} Pop into a hot oven and let ‘er rip.

While that is cooking, chop up some peppers, carrots, green onion and cilantro.

Also! Make a sweet peanut sauce too! Basically, you just measure everything out and stir.

Don’t forget the salt and peppah!

Soooo, right about now the pizza should be hot and bubbly! Pull it from the oven and top with your veggies and sauce.

Last thing to do is top with some chopped peanuts and serve!

This pizza hit the spot for my husband and I the other day. We gobbled it up like crazy! I love fresh veggies on hot and cheesy pizza! I also love any form of carb too. #girlproblems

Thai Chicken Pizza

Yield: 4 servings

Ingredients:

  • 1 recipe fail proof pizza dough
  • 1/3 cup sweet thai chili sauce
  • 2 cups grated mozzarella cheese
  • 1 cup precooked grilled chicken, cubed
  • 1/2 red bell pepper, diced
  • 2/3 cup julienned carrot
  • 2 green onions, chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped salted peanuts
  • for the peanut sauce:
  • 2 tablespoons all natural peanut butter
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sesame oil
  • salt & pepper, to taste

Directions:

  1. Preheat oven to 500 degrees. Sprinkle baking sheet with cornmeal and set aside*.
  2. Spread pizza dough onto baking sheet. Spread dough with thai chili sauce. Top with grated cheese and chicken pieces. Bake for 8-10 minutes or until hot, brown and bubbly. While pizza is cooking, prep veggies. For peanut sauce, whisk all ingredients together until smooth.
  3. Top pizza with prepared veggies and drizzle with peanut sauce. Sprinkle with peanuts, cut into slices and serve.

*You can forgo the cornmeal and line sheet with parchment paper.

  1. Oh my gosh!! What would you have done if your husband wasn’t home!? The big bugs only come out when I’m alone – I usually have to just leave the house after horrible attempts of covering said bug with a [not clear] cup.

  3. I hate sweet pickles as much as I hate spiders, and my five-year-old pickle-loving daughter told me at a birthday party Monday that she didn’t want the rest of her cake but wanted a big pickle. While eating it said, “sweet pickles are gross.” I don’t know where she’s seen/eaten a sweet pickle, but clearly we have a lot in common.

  5. Nothing gets me faster than a spider…really dislike and fear! OK…have been wanting to try your pizza crust and I have my version of thai pizza…willing to try yours…looks delicious. think I would have to make half thai and half some kind of bbq chicken pizza with ranch for my son….

  7. Our house has tons of spiders and my husband doesn’t like to kill them since apparently they are good for the eco-system. Not like I care. I should tempt him with this pizza to get him to go spider killing for me.

  8. I’m the spider relocator in our house because the boyfriend (who is over 6ft and 200lbs) won’t touch them and screams like a baby goat when faced with anything arachnid in nature. Uh huh. I keep him around because he takes care of any lizard infiltrators. We live Australia. Lizards happen. All.the.time. #grossgrossgross
    I suppose I should pay him back for our recent lizard issue with some thai chicken pizza. Carb credit? It’s a thing, right?

  10. Ha..Ha.. I love the word heebie geebies.. I totally had heebie geebies today when my friend showed me a video of some frog legs sprinkled with salt (still totally freaking out )! The pizza looks amazing, totally pinning for later!
