Taco Lettuce Wraps

IMG_0113 Have you guys seen this been done before? Lettuce Tacos?

I was deciding whether to post this {stupid simple} recipe or another tasty {but very ugly} Mexican casserole. I initially started working away on the other post when my husband came along and tried to figure out what food was in my pictures. That in itself sealed my casseroles’ ¬†fate, the poor thing. That cheesy concoction will never see the light of day. So I’m staying up later than normal to write this post for you all.

The things I do for you people! Lol!

IMG_0121 Being on somewhat of a healthy/low carb kick has had me thinking outside the box. Lettuce holding taco fixings isn’t exactly a ground breaking discovery, but it’s a lot healthier and figure friendly to use lettuce in place of tortillas or taco shells. Plus the green color makes them look extra pretty! And I’m pretty sure it’s a scientific fact that pretty food tastes better than ugly food….however this recipe and this recipe are exceptions to that rule.

These Taco Lettuce Wraps can be made for a quick dinner or laid out for the SuperBowl so everyone can build their own. I figure everyone loves tacos, so these would go over swimmingly at your house just like they did at mine. My daughter in particular LOVES shoving all sorts of things into lettuce cups now. It’s awesome :)

IMG_0127 And incase you’re not into the health food kick, I’ve got a tasty treat coming your way on Friday. Stay tuned :)

Lettuce wraps are my favorite and I love how creative this is! I try to do a little low-carbing myself so I am super pumped that I can still enjoy my tacos!

    Dear Lauren,
Thanks for your wonderful recipes! Would it be possible for you to attach the “finished” product photo of each recipe to the “print” version? Your photos are what first gets my attention. I being reminded of what the finished product should look like, when I get around to trying it out for myself.
    Thank you!

Does this mean you could eat as much as you want because there’s no carbs? Like maybe 10.

I love simple, and I love that fresh bright green. I might add some crunchy chips on top anyway, but I definitely want to make these :)

Great idea and yummy!!!! I usually end up eating one taco in the shell and the rest on salad anyway.
