I’m going to make this fast because I have a very loooong to-do list today and only so much time to get it done. Womp womp. C’est la vie with no husband and two children.

Which reminds me: at my husband’s training, he’s allowed 1 hour every Sunday to go to a worship service. This is the only time he is able to relax, enjoy some peace and quiet time and think about something else other than the TAC officers yelling at him. ANYWAYS, the lovely and thoughtful people who put on the service for the Officers of the same faith got approval to call family members and give them messages on their behalf. So, last night I got a phone call with a quick message from my honey. How nice is that?!

It was so nice to get a little message from Gord! Being a single parent is tough work. Props to the single moms and dads out there. I bow down to you and don’t know how you do this for longer than a few weeks at a time. It also makes me REALLY scared for my husband to be deployed. UGH. It won’t happen for a few years until he’s completely trained, {knock on wood} but still. Just thinking about it makes me nervous and shifty-eyed.

IMG_0010ANYWAYS, lets talk banana bread. I LOVE banana bread. My Mom makes an amazing {and I really do mean AMAZING} Banana Chocolate Chip Cake. These remind me of that cake. But not only that cake, but coming home after a cold and rainy evening, getting cozy warm clothes on and having a slice of this with a little peppermint tea. That to me is a little piece of heaven.

So today, I’m thinking of my homesick husband and sending him virtual banana bread for his soul. I think everyone could use a piece of that, don’t you?

Shortcut Spiced Banana Bread

This Spiced Banana Bread recipe comes together so fast thanks to a boxed cake mix! Make as mini loaves or a regular-sized loaf.
servings 12 mini loaves
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 15.25 oz SuperMoist Spiced Cake Mix 1 box, Betty Crocker
  • 2 large eggs
  • 1/3 cup oil
  • 3/4 cup water
  • 2 large very ripe bananas mashed

Instructions

  • Preheat oven to 350 degrees. Spray 12 mini loaf pans with non stick cooking spray and set aside.
  • In a large bowl, stir all ingredients together until smooth and well mixed. Divide evenly between loaf pans and bake 12-15 minutes OR until toothpick comes out clean or with a few moist crumbs attached.
  • Remove from oven and cool 10 minutes before removing from pan. Serve warm or cool to room temperature and store in an airtight container for up to 3 days.

    I happened to have some over-ripe bananas and a spice cake mix, and I found this recipe. I just took them out of the oven, and the smell is fantastic. Of course, I tweaked, because I can’t help myself. I added a chopped apple, dusted with cinnamon, some craisons, and the last of the butterscotch chips. I had extra batter, so I made a few mini- muffins. Can’t wait to try one!

      wondering this as well, doesnt look like any similar questions we’re answered but id maybe follow the time on the cake mix box someahere between pan and bundt for a bread pan

      Says 13×9 at 375 for 28-33 mins
      Or 28-43 mins for a “bundt” cake pan

    I was so hooked until I saw cake mix in the ingredients. I’ve been using a recipe called Banana Banana Bread since a friend shared it a couple years ago. Super easy and quick. 🙂
    Hang in there til your hubby gets home. I don’t know how single parents manage to get it all done and still stay sane. Big kudos to them.

    What a great idea! I was looking for an simple banana bread recipe and here it is! I did not have the spice cake mix on hand, but had a yellow cake. I used your recipe for inspiration and made the yellow cake with two ripe banana’s and a cup of blueberries. The muffins turned out great! I love your website and recipes! Thanks!
