Southwest Salad with Garlic Lime Dressing

There are plenty of fresh veggies in this tasty Southwest Salad topped with crushed Doritos and creamy garlic lime dressing.

I have been dragging and dragging and dragging my life along these last two weeks. Most days I feel exhausted like I’ve been hit by a truck. My lack of energy has been a little ridiculous to say the least. My husband gets less sleep than I do and still gets more accomplished day after day. After mentioning this to a friend of mine, she simply just said “oh, you must be low in iron!”

OHHHHH YEAH!

I’ve been borderline anemic here and there the last 10 years. How do I forget such important things about my healthy so easily? Geeze louise!! During my last pregnancy, my levels got so low the doctor almost gave me a blood transfusion! Crazy, right? I doubled my dose of iron supplements I was already taking and that seemed to do the trick. But this more recent exhaustion situation made me somehow forget that little nugget of information about iron!

Motherhood + working business lady + keeping a house semi clean + 1.2 million things in my head does not make me an awesome rememberer.

I am my mother’s daughter.

Ohhhhhh genetics. Foiled again!!

So, now I’m clawing my way out of this funk, taking my vitamins and iron and slowly getting back to normal.

Halle-freaking-lujah.

I hate feeling…..off.

Anyways.

Vegetable eating is something that makes me feel…..on {for lack of a better word}. Sometimes I push the boundaries of my veggie consumption by adding something unquestionably unhealthy. Today’s culprit: Doritos. It doesn’t completely ruin the nutritional value of the salad, it only makes everything taste eeeeeeeven bettttttttter! The salad dressing also plays a delicious roll in this as well.

I realize this salad is not a groundbreaking brand new idea….not like Wednesday’s post will be….cough cough shameless plug….it IS however exactly how I get my 5 year old daughter to eat salad for dinner and lick her plate clean. Mix a lot of healthy with a touch of unhealthy and voila! Veggies go down the hatch.

THAT is what I like to call balance.

PS- whenever I say the word balance, I think of yoga. WEIRD. #mystrangemind

Southwest Salad with Garlic Lime Dressing & Doritos!!

There are plenty of fresh veggies in this tasty Southwest Salad topped with crushed Doritos and creamy garlic lime dressing.
servings 4 servings
Prep Time 15 minutes
Cook Time 5 minutes
Total Time 20 minutes

Ingredients

  • 8 cups lettuce any kind
  • 3/4 cup grated cheddar cheese
  • 1 large ripe avocado, sliced
  • 1 can beans any kind, drained and rinsed
  • 2 ears corn boiled and kernels removed
  • 2 roma tomatos diced
  • 1 cup loosely packed cilantro
  • 2 cups precooked frozen grilled chicken
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 2 limes cut into wedges
  • 2 cups crushed nacho cheese doritos
  • salt & pepper to taste

for the dressing:

  • 3 tablespoons honey
  • juice of 2 limes about 3 tablespoons
  • 1 small clove garlic grated
  • 1/4 teaspoon cumin
  • salt & pepper to taste
  • 1/4 cup canola oil

Instructions

  • Divide lettuce evenly between 4 bowls. Arrange ingredients around lettuce: cheese, avocado slices, beans, corn, tomatoes and cilantro.
  • Heat precooked chicken in microwave on high for 3-5 minutes or until thoroughly warmed through. Cut into cubes and toss with spices. Arrange on salad.
  • Add lime wedges on the side and top with crushed doritos. Sprinkle avocado and corn with salt and pepper, if desired.
  • For the dressing, combine all ingredients together in a shallow bowl and whisk to emulsify. Drizzle over salads and serve.

    Love it! I love salads like this. I think you are doing great! you are taking care of you and your family. Just because you are posting a lot of recipes from a mix of things, people should not make you feel ashamed for posting it. Does not mean you are eating unhealthy. Does not mean that is all you eat. I post things I think others will like regardless if I eat it or not, or even would like to try. People need to think how it makes the other person feel when posting things. One does not like it, keep it to ones self and move on. Love your blog and all you have to share. Hugs!

    Deliciously yummy salad. Just remember to take the iron supplements with vitamin c, can be 100% juice or a pill. It’s absorbed much better.

    Delicious looking salad! You should also definitely get your vitamin D levels checked at your dr. I had the same symptoms and it was a huge vitamin D deficiency! Easy to fix too!

    I just have to tell you that I turned this salad into a ‘salad in a jar’ on Sunday and have been eating it all week for lunch – IT IS SO GOOD!!! I brought doritos separate and crumple them on top so they stay crunchy and the dressing is just the best! So so so good!! Thanks so much for sharing – this will have a permanent place on my lunch menu!! 🙂

    Adding Doritos sure is a sneak way to get your daily dose of veggies…I like it! The dressing sounds amazing and I’ll probably make that even when I don’t add Doritos to my salads 🙂 Subbing ground beef for the chicken will help to boost the iron content.     Two weeks ago, my doctor told me I was anemic after I had blood work done. So, I’ve been taking iron pills (when I remember to). They tend to make me sick if I take them after breakfast which is the best time for me to remember. So, it’s been hit or miss…ugh!!

    Doritos on a salad…love it!!! My kids would devour this salad in minutes!!! Glad you remembered what was causing you to drag…keep on pumping those vitamins. You need it to keep up with kiddos and work! I know when I don’t take my daily vitamins I start to drag too. Thank goodness for Spark and vitamin packs to keep my energy up!!!

    I too have had a problem with iron. I would take extra and it still didn’t help. I would go to donate blood and not be able to because I didn’t have enough iron. Finally one of the technicians told me “You know you shouldn’t take iron with dairy” and she also said “Taking iron with Vitamin C helps it to be absorbed.” So what I do now is take an iron supplement and a vitamin C supplement before bed. (My breakfast is a large Matcha latte each day). So if you still have problems then give it a try.

    Love the looks of this salad…on my list for this week. I absolutely love and make your chopped salad all the time. I have been in a doldrums/tired state too but think mine is the change in the light cycle, the cold weather, and not enough vitamin D…I was deficient and stopped taking it this summer because I get more sun…but not now…so, back on it. Simple move…big results. Hope you continue to feel better…definitely not good to feel you are out of steam and keep up with everything.
