I go through different phases/attitudes towards cleanliness in my life.

That sounded weird.

Like with housework and chores. Not me as a person…I promise I shower.

Ok, that was awkward.

I really do shower.

Umm…..ANYWAYS. When it comes to like, cleaning my kitchen or getting laundry done and put away or vacuuming all the rugs. YEAH. Sometimes I’m super gung-ho and other times I’m like ‘screw it. I don’t even care.’

Thus far, I haven’t really made any correlations between stages of life versus these attitudes BUT I have noticed that having my husband home makes me not want to clean which is weird. Maybe I think he’ll do it for me….cause that boy has nothing better to do.

Ha!

Or maybe I’d just rather spend my time daydreaming about these. Or this. Or these.

And whaddaya know….I’m starving.

This french toast makes me not want to clean….which is perfect because mother’s day is right around the corner. All the more reason to leave the filth where it sits and save it as a perfectly crafted gift from my husband and kids.

ANYWAYS, I am in love with this new topping for french toast. It’s light, creamy, sweet and really really delicious. Serve it for breakfast, brunch or maybe even dessert. It’s really that good. My Mom makes a ricotta version of this lemon cream that we stuff into crepes that is downright to die for {recipe in my ebook…get a copy here}. I used cream cheese because I always have that in my fridge, but ricotta would be equally delicious. Spread this on generously to those warm french toast slices and dig in!

Lemon Cream French Toast

Yield: 2 servings Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes

Ingredients:

for the french toast:
2 large eggs
1/3 cup milk
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
6 slices white sandwich bread
butter, for frying

for the lemon cream:
8 oz. softened cream cheese
4 tablespoons granulated sugar
zest of 1 lemon
juice of 1 lemon

fresh strawberries + powdered sugar for garnish

Directions:

Preheat nonstick skillet over medium heat. Melt half a tablespoon of butter into the bottom.

In a shallow dish, whisk eggs, milk, vanilla and cinnamon together. Dip 1-2 slices of bread into the egg mixture and place into hot pan. Cook 1 minute per side or until browned. Continue this method until all french toast is cooked.

For the lemon cream: whip all the ingredients together until smooth.

Spread some lemon cream over each slice of french toast and top with sliced strawberries and/or powdered sugar. Serve immediately.

  5. I have to remind myself that the dishes can wait, the dust balls can gather. Take time to spend with yourself and your family. You’ll never remember those dirty dishes but you’ll remember your babies. Your FT is so fresh! Loving it!

  6. I go through the same phases too! There are times when I just don’t care and I’m too lazy to clean, but then I reach a point where I can’t stand it anymore and I make myself clean! With a dog and two cats, my house can get (& feel) really filthy after awhile with no cleaning.

  9. OMG Lauren, we must be long lost twin sisters?! Well, maybe not twins, you’re much younger than me. Anyway, you described me to a “T”. I just had a gung-ho cleaning day Saturday. Ya know why? Because my husband had to work. If he was home, I wouldn’t have cleaned. I’m an all or nothing cleaner for sure. The other thing that REALLY motivates me to clean is going away on vacation. I have to have my house clean before I leave because the last thing I want to do after a vacation is come home and clean. Ugh! Have a great day!!
