Hummus and Veggie Wraps

You guys. Guess what. I just signed my daughter up for Kindergarten yesterday. I took her to the elementary school, filled out the paperwork and BAM. She’s in.

SOMEBODY STOP THE CLOCK.

Pretty sure I was just pregnant. Wait…..that baby wasn’t my daughter? I have a son?!

{I’m kidding, Mom.}

We’re going to a kindergarten orientation next week. The little flyer said there would be pizza, a tour, a gift for the new students and a meet and greet with the teachers. Brooke was hesitant and seemed overwhelmed by the whole thing, but then she overheard the ‘pizza’ and ‘present’ part of my conversation with my husband….and then miraculously became fine.

Kids.

ANYWAYS. That’s the latest on the school front. I’m going to go cry myself to sleep now.

In other news, I’ve gotten even lazier in the kitchen and served these wraps for dinner last week.

Yes, it’s possible for me to get even lazier. Oh you guys.

No cooking required, ready in 10 minutes, healthy and yummy Hummus and Veggie Wraps. That’s what we had. With orange slices and carrots too. It’s like breakfast for dinner except lunch. Totally acceptable, right? At my house anything goes.

For my wraps, I just grabbed the veggies I had on hand, but anything will work. I used grated carrot, cucumber, tomato, peppers, onion, baby kale and spinach. Oh and hummus, but that’s sort of a given. I made these again the next day but added in some deli pepper turkey for some extra protein. BEST IDEA EVER. I love pepper turkey and buy it whenever it’s on sale because that shiz gets expensive reeeeeeal quick. Slap it all on, roll it up and enjoy. Easy peasy and will last a couple days in the fridge if you want to make in advance for a grab and go lunch….or dinner.

My daughter had a modified version with no onion. I tried to sneak in a few tomatoes, but alas. The girl isn’t color blind.

I tried.

Anyways, here’s the printable; have a great day!

  1. Love these “quickie” wraps! Perfect lunch for me since I love a lot of veggies in my lunch. My family would complain if I served these wraps for dinner, but they look so good I just might anyway. 😉 pinned!

  2. Such a perfect light lunch!! My boys won’t touch veggies so I know better than you serve for dinner, but their loss.

I can’t believe your sweet girl is school bound already. Think of how much fun you’ll have school clothes shopping!!

  3. I wish I could find baby kale. I’ve looked everywhere – even the Health Food store which stocks a lot of organic produce. I may have to drive to the next major city 2 hours away.

  4. wow Kindergarten today, car keys tomorrow. Those big steps away from us and towards independence are such life changing moments for you. Enjoy the growing up years because somehow they zip past and your “baby” is 30 with a baby of her own.

  5. My youngest turned 4 a month ago. I swear she was just a baby. Blink of an eye I tell ya! My husband would love something like this in his lunch. He switched to wraps from sandwiches to lose the last little bit of weight. Now he is super skinny and I hate him. Totally kidding. Perfect easy and quick recipe. Pinned and shared!!
