Cookies n’ Cream Brownie Bars
Happy Friday! If you follow me on Facebook, then you know that I am out of town! My cute little family drove 12 hours to surprise my younger sister {who was visiting my older sister} before she goes to college. Man, was her reaction priceless! We recorded the whole thing, so maybe I’ll have to post that video later! We are having a ball hanging out with my side of the family, enjoying some seriously HOT weather.
In the mean time, here is a recipe I whipped up last week that my family devoured. Literally devoured. No leftovers. {Are there ever dessert leftovers in my house? Haha….never!}
You know how on the back of the brownie mix boxes, there are directions to make cookies? Well, for this recipe, you do just that but instead of making cookies, you bake the whole thing in a square pan. Then you top ‘em with cream cheese frosting and oreo cookies to give you….drumroll please…. Cookies ‘n Cream Brownie Bars! {Sounds tasty, right?}
Man are these good! I love cookies ‘n cream ANYTHING. I was on a s’more kick the last few weeks and now have moved onto a cookies ‘n cream kick. Do you guys like cookies ‘n cream? We {apparently} REALLY REALLY do. Crunchy, creamy, chocolate, vanilla….it’s a little bit of everything! Oh, and did I mention that these are healthy? Well they are!
And by healthy I mean easy. Very very easy! Take a look at the ingredients list and you’ll see what I mean.

Cookies n’ Cream Brownie Bars
yield: 12 servings

Ingredients:
for the brownies-
1 box brownie mix
2 eggs
1/3 cup melted butter or oil
1/2 cup white chocolate chips
for the frosting-
4 oz. cream cheese, at room temperature
2 tablespoons softened butter
1 cup powdered sugar
1/8 teaspoon vanilla extract
1 tablespoon milk
10 Oreo Cookies, crushed
Directions:
Preheat oven to 350 degrees. Lightly grease 9×9 square dish and set aside.
In large bowl, mix brownie mix with eggs and butter until combined. Stir in white chocolate chips. Pour into prepared pan and smooth the top. Bake 25-35 minutes or until toothpick comes out clean when inserted. Cool completely.
Whip cream cheese and butter together until light and fluffy. Stir in remaining ingredients and whip until smooth. Scrape sides and whip again. Spread mixture over top brownies. Top with crushed Oreos and cut into bars. Serve.

Ditto the above–cookies ‘n’ cream is my FAVORITE classic ice cream flavor. These look so yummy! I’ve made cookies ‘n’ cream brownies before, but I’ve never added white chocolate chips–totally on my to-do list.

YUM. My sister is planning a Cookie Monster birthday for her 2-year-old boy in October. She wants to serve only cookies – but this might be a nice addition, while keeping with the cookie theme!

Yum…these look fabulous…I love anything that has cookies and cream in it! When I first saw them I thought there was peanuts in the brownie layer and I just about died with excitement, but after reading the recipe, I realized they are white chocolate chips. Still, it looks like a must-try recipe!
