Coconut Lime Dessert Shots
Hi, friends! Happy Friday! Before I get into this recipe, I wanted to tell you about a blogger I know named Jennifer Perillo. A few days ago her husband, Mikey, died of a heart attack. It came as a surprise and as a shock to her as it did to many of us. He died too soon, too young, and left a beautiful family behind. Lots of people have asked what they could do for Jennie and her only request was for us to make a Peanut Butter Pie {Mikey’s favorite} and share it with someone you love. So today, please join me in hugging your family a little tighter and for a little longer because you never know what tomorrow will bring.After that, it seems almost strange for me to be my happy old self, so I’ll make this quick.
These are perfect summery weekend treat for you guys! Aren’t these little dessert shots cute? This is the perfect amount of dessert that I need in the summer time. These shots are super easy and take about 10 minutes to make. I used instant vanilla pudding that I flavored with lime zest and coconut extract and then topped them with whipping cream from the can. How’s that for lazy?!
These are light, refreshing and downright delicious.

Coconut Lime Dessert Shots
yield: 4 servings
Print This Recipe
Ingredients:
1 graham cracker sheet, finely ground
3/4 cup vanilla pudding
3/4 teaspoon coconut extract
3/4 teaspoon lime zest
whipped cream in a can
toasted coconut
lime wedges
Directions:
Grind graham cracker into crumbs and divide evenly between 4 shot glasses. In a small bowl, stir pudding with coconut extract and lime zest. Spoon evenly between shot glasses. The pudding should almost reach the top. Refrigerate at this point if you aren’t ready to serve. Once you are ready to serve, top with cream, toasted coconut and a lime wedge. Serve immediately.

Yeah, I heard about the sad news for Jennifer’s family. My prayers are with them now.
