Chewy Jumbo Double Chocolate Candy Cane Kiss Cookies

Chewy Jumbo Double Chocolate Candy Cane Kiss Cookies Final 2

Dear Santa,

I’ve been a good girl this year. Not an over-achiever, but I’d say pretty good. I know I could do better…blah blah blah… so I’m not expecting much from you. Plus I’m an adult and I know you make the rounds for the kids. But hopefully {since my wish list isn’t very long} I’ll see those 3 gifts under my tree Sunday morning.

As incentive to come to our house, I’ve enclosed some photos of the cookies I will have here waiting for you.  They are called Chewy Jumbo Double Chocolate Candy Cane Kiss Cookies and I’ve purposely made them with extra chocolate, extra candy, extra love and packed them full of calories….’cause that Mrs. Clause likes you burley.

Here is what I will do on the evening of the 24th:

{1}Gather my ingredients–>do you guys get Scharffen Berger up at the North Poll?

Cookie Ingredients

{2} Cream butter and sugar together Jumbo Cookies 1

Jumbo Cookies 8

{8}Chop up my Scharffen Berger Chocolate Jumbo Cookies 7

{9} Chop up my Candy Cane Kisses Jumbo Cookies 9

{10} Pour those into my dough Jumbo Cookies 10

{11} Mix Jumbo Cookies 11

{12} Fill up the muffin top pan with the dough {I’ll leave this pan out for you to take back to Mrs. Clause ’cause I know Chicago Metallics doesn’t Fed-Ex their stuff up North} Jumbo Cookies 12

{13} Bake until perfectly chewy–about 13 minutes. Chewy Jumbo Double Chocolate Candy Cane Kiss Cookies Final 1

Thank you in advance for the great gifts! Hope you enjoy the cookies!

Merry Christmas! xoxo

Sincerly,

Jumbo Double Chocolate Candy Cane Kiss Cookies

Yield: 8 jumbo cookies

Ingredients:

1/2 cup butter, softened
1 cup vanilla sugar
1 egg
1 teaspoon vanilla
1 cup all purpose flour
1/3 cup cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
heaping 1/2 cup chopped Candy Cane Kisses
2 oz. semi sweet dark chocolate chunks

Directions:

Preheat oven to 350 degrees. Lightly spray muffin top pan with non stick cooking spray and set aside.

Cream butter and sugar in a stand mixer until light and fluffy. Stir in egg and vanilla. Scrape sides and mix again. Stir in all dry ingredients until just incorporated. Stir in chopped kisses and dark chocolate by hand. Spoon about 1/4 cup batter into each cavity and flatten lightly. You want to be careful not to over fill!! Bake 13 minutes or until edges are done and middle looks matte but still soft in the middle. Cool 5-10 minutes in the pan and remove to cool completely. Serve warm or room temperature with milk.

    these cookies look perfect!

and thanks for the camera info in your tweet yesterday. I have the 50mm 1.8 lens but never use it! I use my 24-70mm but everyone gets such great results w/ their Nifty Fifty, I should dust mine off!

Thank you for all of the spectacular recipes! I can’t wait to try these. I need to get one of those muffin top pans…probably too late to add it to this year’s list though. Bummer. I’m sure Santa and Mrs. Claus are going to make sure you get exactly what’s on your list;o) I bet you are a favorite stop!

What if you don’t have a muffin top pan? Will a cookie sheet do?

Can I make these on a cookie sheet and smaller size (to get more to pass around?) I would imagine so, but thought I would ask!
