Cheesy Beef Enchilada Dip

Well hi-ya! It’s been awhile. I actually feel slightly disconnected from you all since I took a week off from blogging.

YOU GUYS. I haven’t taken any extended period of time off since I started my blog over 5 years ago! So, the itty bitty break was exactly what I needed but it feels so good to be back! Contrary to popular belief, I LOVE BLOGGING. And food. {Um, duh.}

Anyways….WHATDIDIMISS?

Christmas? Technically, no. I didn’t miss that. My birthday? Nopers. That’s TUH-DAY!  New Years? That’s in a few days, so hallelujah, I won’t miss this huge week of partying at my house.

And speaking of partying, I’ve been doing a little too much of that lately and have come down with a bit of a cold. Typical. Of course when I take time off is when I get a cold. Laaaaaame.

But being sick on my birthday has its perks. Namely, no one {cough cough my husband} is allowed to get annoyed with me after constantly declaring “its my birthday and I will ________ if I want to”.

{filling in the blank is my favorite part.}

For example:

It’s my birthday and I will sleep the whole day away if I want to.

or

It’s my birthday and I will eat your breakfast if I want to.

or my personal favorite

It’s my birthday and I will punch you in the throat if I want to.

{Calm down mom, I didn’t punch anyone in the throat.}

So yeah. I’m annoying the heck out of my husband today AND sharing a stupid-easy recipe for Cheesy Beef Enchilada Dip.

If you have leftover pot roast {like I did the other day}, then this recipe will be done in a SNAP. So so simple to throw together and EVERYONE will love it. My two kiddos gobbled this up like crazy and then my husband finished the leftovers.

Hot and cheesy Mexican flavored anything makes me weak in the knees. A good problem to have, folks.

Cheesy Beef Enchilada Dip

This Cheesy Beef Enchilada Dip is the perfect appetizer for any occasion. You only need three ingredients and ten minutes! Hot and bubbly Mexican appetizer that everyone will love.

Yield: 6-8 servings

Ingredients:

  • 3 cups leftover pot roast {not in gravy}
  • 1 can mild red enchilada sauce {1 1/2 cups or so}
  • 2 cups grated cheddar cheese
  • cilantro {optional}
  • tortilla chips for serving

Directions:

  1. Shred pot roast and place into a large bowl. Stir enchilada sauce into the meat with half the cheese. Microwave 3-4 minutes or until hot and cheese has melted. Stir in a little chopped cilantro if you'd like. Pour into oven safe dish, top with remaining cheese and broil 1-2 minutes or until hot and bubbly. Serve immediately with chips.
