Cheddar Bacon Ranch Dip (aka Memorial Day Dip)

Have I ever told you guys that the first time my husband told me he loved me was over Memorial Day Weekend in 2007?

Well it was….and it was totes awkward, yo.

A little back story: I have basically loved him since the moment I laid eyes on him, but I didn’t dare be the first one to tell him that. How psychotic would that have sounded? Like suuuuper sketchy. Pretty sure I could write a book called “how to scare off a man in 1 minute flat”. Just sayin’.

Umm…..anyways…..back to the story:

We had a break for the long weekend from school, so we drove down together to Utah to visit my sister and her husband {and his brother and wife}. They lived about 20 minutes apart and we all got to meet each other. At this point we were just dating, but starting to get serious…I think this was the initial ‘meet the family’ for the both of us.

ANYWAYS. We were parked outside my sister’s house one evening…probably the Saturday night and Gord was acting all weird. Honest to goodness I thought he was going to break up with me…which would have made for an awkward drive back to college, lemmetellyou. But luckily, it was the exact opposite and it has become a precious memory that I love!

The rest of the weekend was a bit of a blur, BUT I do remember how we were all invited to my sister’s pool for a party before we left. It was a really hot weekend, so we swam, ate a bunch of amazing snacks, and I admired my husbands hot bod from a lounge chair.

Yes, it was a good weekend indeed.

So, whenever I think about Memorial Day, these are the memories that flood my mind. There is nothing much better than enjoying yummy food by the pool with family and friends to kick off the summer season…which is why I created this Cheddar Bacon Ranch dip. For all your poolside snacking needs. Or just snacking needs. I’m not biased. If you have a stomach, you will like this dip.

Here’s how to make it:

Start by measuring out some sour cream, cream cheese, green onion and ranch dressing mix in a large bowl. I used a stand mixer, but you can use whatever. Handmixer, blender, stir by hand. It don’t mattah.

Stir it up until it’s completely smooth and creamy.

Now comes the heavenly goodness. Cook up some bacon to a happy medium between crispy and chewy….then chop it up into bits. I used a mini chopper, but feel free to use whatever.

Dump all that bacon into the bowl along with a ton of shredded cheddar cheese.

Stir it up and voila! Your dip is done.

Spoon it into a bowl, top with some bacon {if you have any left} and serve with veggies and crackers.

It’s seriously so flavorful and the perfect summertime dip to munch on.

I love using cheddar and cream cheese together with the addition of sour cream. All three products lend different tastes and textures to make this dip the tastiest it can be. Plus the bacon doesn’t hurt either. Swing by the refrigerated dairy section next time you’re at the store and pick up some cheddar and cream cheese! Cheddar Bacon Ranch Dip (aka Memorial Day Dip)

Yield: 6 servings

Prep Time: 15 minutes

Cook Time: 0 minutes

Total Time: 15 minutes

Ingredients:

8 oz. cream cheese, at room temperature
1 cup sour cream
1 packet ranch dressing powder, such as hidden valley
2 green onions, sliced
10 slices bacon, cooked and crumbled
2 cups grated cheddar cheese
veggies and crackers to dip

Directions:

Stir cream cheese, sour cream, ranch dressing and green onions together to combine. You just want to disperse the powdered ranch throughout the mixture and incorporate that cream cheese. Stir in the remaining ingredients and serve with veggies and crackers.

Will keep in the refrigerator for up to 5 days in an airtight container.

    This looks so amazing! We don’t have ranch dressing powder in the UK, what do you think would be the best substitute? I’ve found a recipe for homemade ranch dressing powder on Gimme Some Oven, but it needs powdered buttermilk, which is another thing I’ve never seen in the UK! Help! I have a very strong desire to eat this dip now!!

      You can omit the powdered buttermilk – the yogurt will fill that need.

    That’s the weekend I got married! Celebrating 7 years officially on the 27th (we like to celebrate the Sunday of Memorial Day weekend every year) and expecting our first baby 8/1 :)

    I’m Australian, could you use french onion soup powder instead. ? I’ve never seen ranch dressing mix here either

      No, it’s not the same!! Do you have regular bottled ranch dressing? That might be a good thing to add in with a little extra salt & pepper.

    I have made this for years with just mayo –
    I like the idea of doing cream cheese, yogurt and Ranch Dressing.
