California Club Blue Cheese Chopped Salad from www.laurenslatest.com I went to California Pizza Kitchen last Saturday and fell in love with their BBQ Chicken Chopped Salad all over again. I used to love that salad, then magically forgot that restaurant even existed. #pregnancybrain I’m really smart like that.

Anyways, I went back with a friend to this beloved chain restaurant and basically died over the deliciousness.

Chopped salads are my LIFE. I now crave them 94% of the time.

Instead of trying to recreate this salad, I made a whole new kind with ingredients I had on hand. Totally fell in love all over again. Even my husband who isn’t that big of a blue cheese fan was loving this!

The only thing I regretted was not making a bigger bowl. Oh well. There’s always tomorrow, right?

Anyways, this is pretty straight forward dish to make, but here are a few step-by-steps anyways…just because I love ya!

Chop up some lettuce, tomatoes, avocado and cooked bacon. Then toss together with a few black beans and blue cheese. Then toss with a simple creamy dressing {garlic, lemon juice, mayonnaise, salt, pepper} and serve. Seriously, this salad is amazeballs.

If you’re wanting to make this in advance, chop everything first, then toss with the dressing right before serving. That way things don’t get soggy.

Soggy salad= no bueno.

California Club Blue Cheese Chop Salad

Yield: 2 servings

Prep Time: 15 minutes

Cook Time: 0 minutes

Total Time: 15 minutes

Ingredients:

1 large romaine heart, washed and chopped
1 large tomato, chopped
4 slices bacon, cooked and crumbled
1/4 cup blue cheese crumbles
1 ripe avocado, diced
1/4 cup rinsed and drained black beans

for the dressing-
1 clove garlic, minced
juice of 1/2 large lemon, about 1 1/2 tablespoons
1/3 cup mayonnaise
salt & pepper, to taste

Directions:

Toss all ingredients for salad together and set aside.

For dressing, whisk all ingredients together and toss with salad. Serve immediately.

    I made this for dinner tonight and used turkey bacon. This is like all my favorite things in a salad. The black beans are such an awesome touch. Gives it that nice bit of protein. Thanks so much for this!!!!

    I made this today for lunch! So delicious. I used pancetta instead of bacon…cause it was already cubed and ready to pan fry. This is a keeper for sure. thank you so much.

    Yum! I’m usually not much for salads, but when you throw in blue cheese I can be convinced :) Castello Blue Cheese crumbles have a really rich blue flavor, so they are great for salads because they really add a punch. I’d be tempted to add some extra bacon too…okay, maybe I should try to keep the salad at least a *little* healthy :)
