Apple, Bacon & Pecan Salad with Garlic Balsamic Dressing

Apple Bacon & Pecan Salad with Garlic Balsamic Dressing from www.laurenslatest.com

Hear ye, hear ye!! This is my new favorite salad.

That is all.

……

Ya, like I could leave it at that! PSYCH! I am a girl after all! Soooooo, my days have become a little more entertaining with no husband BECAUSE……drum roll please……I’m making little daily videos of what we have been up to every day. That way when my husband gets home from Army training, he can see everything we did while he was gone 🙂 Plus, I suck at writing in a journal. This way, it’s like a video journal! Much easier! I’m posting them all on my youtube channel. Be sure to watch Day 1, Day 2, Day 3 and Day 4. He’s been gone longer then just 4 days  but I only got the idea 5 days ago. Oopsie. *The last minute of Day 3 is my favorite. Make sure to turn up the volume!

Now, about this salad. It is gooooooooood.

Apples + Bacon + Pecans + leftover BBQ chicken + Garlicky Balsamic goodness = one heck of a party in your mouth.

I happened to have some leftover bacon I had precooked in my fridge along with some grilled chicken from a few days ago. That really made this salad come together in a cinch!  If you don’t have chicken readily available, it’s really no big deal. Just make sure you don’t forget the bacon. That is important.

And now for something equally as important….or not: I just finished watching Monday’s Bachelorette episode…..she’s already in love with Brooks?! And ABC didn’t edit her out saying that? Whaaa? I think she picks Brooks in the end since she just FREAKING told everyone that she can see him proposing to her. My mind is blown. But then, why is she crying in the previews saying she wants to go home? Ahhh!! I don’t understand!!!! And while I’m on this subject, I really think Sean and Catherine are a weird couple. I don’t know why, they just are.

This stuff really consumes my life when my husband is not around to make fun of this show.

Gotta love reality TV!! Haha…..anyways, check out my youtube channel, the Bachelorette and make this salad 🙂 LOL!

  2. I love the video idea! Hmm it probably would have been great while my hubby was gone for 5 (yes FIVE) weeks. He just got home and had to go right back to work… ugh thank you Uncle Sam. Oh yeah he is an active duty reservist so he works/lives/breathes “work” 24/7. 5 weeks at Quantico… and we have 6 weeks to look forward to next year. during which time we have the middle boy turning 18 as well as his graduation from high school… and he will more than likely be leaving for boot camp soon after…. okay we will not borrow trouble. especially since our eldest is currently gone… flew the coop… joined the army (active duty) and is in bootcamp… goal… Army Ranger… he’s loving everything so far… qual’d on the range in the first 20 minutes. I digress… can you tell i am missing adult “conversation”?

This salad… THANK YOU, Bless you!!! You have saved me!!! WE ate something similar at a local restaurant recently and I’ve struggled to recreate the dressing… girl THIS is it!!! yes i just made salad dressing at 9:00 but as soon as I read this it just clicked…. so insanely good! (i added a few dried cherries to the little bit of salad i tried this one… died, i repeated died!!! it was so good!!!) My family will thank you for this!

  7. I thought from the beginning she would pick Brooks but I like you am getting a little worried about her crying. But I have a bad feeling thinking one of them in the next episode either wants to go home or does not want to get married, or something crazy. But I think having a salad and watching reality TV seems like a great way to end the day. Can’t wait to try it out!

You think?? Uh-oh….now I’m worried!! In a preview from last week or the week before, they show everyone crying!! What the heck is going to happen?

  14. Brooks is TOTALLY not as into Des as she is into him. This is NOT going to end well. I think she should have sent him home and kept poor Zak…though I am now rooting for Zak to be next Bachelor! Whooo! (I thought he was a dumb bro at the beginning but these last few episodes convinced me otherwise. Even if his family singing to Des was a little creepy and weird. Also, who knew that a nose adjustment was a thing? Hometown dates are always so weird.)

Oh, And I didn’t care much for Sean picking Catherine, either. They don’t seem to match for me. This stuff clearly consumes me, too.
