Super Speedy Double Chocolate Pie

Me and my kids can’t seem to catch a break! We all have pesky coughs and colds and can’t seem to get over them! Well, technically Blake is pretty much aok now, but Brooke and I managed to get the brunt of whatever virus this is and are still rubbing and sniffing all the essential oils and guzzling all the green juice in the greater Portland area.

My husband, however, has magically stayed healthy and I have a feeling he’s the carrier of said virus and he’s secretly out to kill us.

He denies it {typical} but I don’t believe him. Slash maybe I’m not thinking clearly?!

That can’t POSSIBLY be it.

In other news, I had a weird and slightly disturbing pregnancy dream a few days ago about a girl who doesn’t like me very much stabbing me in the stomach….at church of all places.

*It was at this point that my husband told me I wasn’t thinking clearly.

**I probably should NOT have told him about my dream. Definitely hurt my credibility.

ANYWAYS, the girls in this house are sick and the boys are not. Life is not fair.

More exciting life happenings: the next installment of my “oh crap, I’m going to a party and have nothing to bring” recipe series. This time PIE! I’m actually on a pie kick so I’ll be posting a lot of these super quick pie recipes that are all completely perfect for Thanksgiving and/or Christmas. YES.

I thought I’d start with a typical pie flavor, CHOCOLATE, and make it more decadent and delicious and chocolatey. Because that’s just what I do ’round these parts.

I use a simple instant chocolate pudding as the base, add in more chocolate {!} fold in some whipped cream {!!!} and pour it all into a pre-baked {store bought!!!!!} pie shell.

It’s seriously so stinkin’ easy to throw together and tastes awesome 🙂

Super Speedy Double Chocolate Pie

The fastest pie ready in a snap!! Also: the filling tastes like a cross between melted chocolate and mousse. YUM.

Yield: 8 servings

Ingredients:

  • 1-9" blind baked pie shell {I used a Marie Callender's frozen crust}*
  • 8 oz. semisweet baking chocolate {I used Ghiradelli chocolate}
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar {optional}
  • 2 cups cold milk
  • 1-5.1 oz. package instant chocolate pudding
  • chocolate shavings for garnish

Directions:

  1. For the filling, break baking chocolate into pieces into a bowl and melt slowly in the microwave, stirring every 20 seconds. Once melted 2/3rds of the way, continue to stir chocolate to melt the rest of the way. Set aside to cool.
  2. In a large bowl, whip cream with vanilla and powdered sugar until stiff. Set aside.
  3. In another large bowl using a hand mixer, whip milk with chocolate pudding mix until smooth. Sit 3 minutes to thicken. Whip in cooled melted chocolate. Scrape sides and mix again briefly. Fold in half of the whipped cream. Pour into cooled pie shell. Top with remaining whipped cream and chocolate shavings. Cover gently with plastic wrap and refrigerate until ready to serve.
  4. Serves 8.
  5. *Bake pie crust according to package directions and cool completely before filling.

  6. Lauren, I made a similar pie this weekend! I made a cookie crust using Teddy Graham’s, then I made 1 pkg. each of Oetker dark and milk chocolate mousse. I spread the dark in first, then the milk chocolate and topped it with Cool Whip and finally shaved chocolate for garnish. Happy Birthday to my husband!!

  7. Best chocolate pie I’ve ever made, rave reviews from all who ate it today, thx for our new favorite holiday pie. Customized with some toffee bit sprinkles along with grated chocolate on top. For Christmas may try some crushed peppermint candies instead. Truly foolproof and outstanding recipe!
