Spicy Sausage Alfredo Pasta

Ok, ok, so remember this post? WELL, update!! We made it to Idaho safe and sound and I only lost 5/8 of my sanity. Hallelujah! The drive went a lot smooth than expected. God bless DVD players. And sleeping pills. {Just kidding, Mom.}  Also, my nephew is the cutest thing ever. So tiny, such defined features AND so so much hair!! Blake most definitely did not have that much, but Brooke did.

Ahh, babies. It kind of makes my ovaries kick into overdrive. Except not really. My ovaries are warped, man.

But, that’s probably tmi for your Monday morning. Sooooo, lets move on. 

Do you remember this recipe? Well, this is the upgraded 2.0 spicy garlic version. That’s right. It’s actually possible to make Brown Butter Alfredo better! Who knew? If you’re not into sausages…or spicy things, feel free to just make the original version found here. BUT, if you’re ready for a little kick, try this pasta dinner out tonight. It’s ready in about 30 minutes and it’s deceivingly simple to do. Minimal ingredients and tastes like it came out of a restaurant kitchen.

Here’s how you make it:

Start by cooking up some pasta in lots of salted water. I used this Papparadelle I found at Trader Joes, but really any kind of pasta will do.

While the pasta is cooking away, brown some spicy italian sausage in a cast iron skillet. Once things are nice and brown, remove from heat and drain.

Back into the hot skillet, melt in some butter and brown…then add in some grated garlic. Cook mayyyybe 30 seconds, then…

…stir in the cream and the grated parmesan cheese.

Ok, the pasta should be done right about now, so drain and set aside.

Back to the sauce, slide the cooked sausage back in and stir to coat in the alfredo sauce.

Toss your pasta back in, add a little parsley and serve!

Spicy Sausage Alfredo Pasta

This brown butter Spicy Sausage Alfredo Pasta is ready in about 30 minutes and tastes like it came out of a restaurant kitchen.
servings 4 servings
Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 8 oz Papparadelle pasta
  • 3 spicy italian sausage links
  • 1 large clove garlic grated
  • 1/4 cup butter
  • 1 cup heavy cream
  • 1 cup grated parmigiano reggiano cheese + extra for garnish, if desired
  • salt & pepper to taste
  • chopped parsley for garnish optional

Instructions

  • Bring large pot of salted water to boil. Add in pasta and stir. Cook according to package directions and drain.
  • While pasta is cooking, remove sausage meat from casings and brown in a large cast iron skillet.
  • Remove meat from skillet to drain and set aside. Place cast iron skillet back on heat and add in butter. Cook 1-2 minutes to brown, then stir in garlic and cook until fragrant, 30 seconds.
  • Stir in heavy cream and cheese, then add in cooked sausage. Taste, add in salt and pepper to taste, toss with pasta and serve. Top with chopped parsley if desired.

    I would like to know if you could use spiral or egg noodles or whole wheat pasta, like in your BROWNED BUTTER ALFREDO PASTA? We don’t have a trader joe’s here. We don’t eat a lot of pasta. We are watching our carbs, have a wedding to go to soon. But I’m trying new recipes and this looks really good.
