Southwest Turkey Burgers

Well, before I get into the post for today, I have some fun news! I was notified yesterday that I won a cookie contest with my Lemon Crinkles. Ok, moving on.

Today, I decided to post a delicious dinner I made last week: Southwest Turkey Burgers. This is a great meal because it is hearty, healthy and delicious! Whenever I get the chance, I like to fill my dinners with veggies galore and this recipe is no exception. I fill these burgers with onions, garlic, red peppers, corn and black beans. Then, I top them with lots of fresh tomatoes, avocados, lettuce, cheese and salsa! Have that on a whole wheat bun and that my friends is a complete meal! No salad necessary! We love anything tex-mex, so these were a hit, even with my two year old!

It would make a great weekend lunch or dinner, especially if it’s going to be a little warmer in your neck of the woods. I think rain is in our forecast! If that’s the case, make and enjoy your burgers inside. They will still taste the same!

Southwest Turkey Burgers
yield: 6 medium or 4 large burgers

for the burger patties-
1.25 lbs. ground turkey {93/7}
2 tablespoons butter, divided
1/2 cup diced onion
1/2 cup diced red bell pepper
1 clove garlic, minced
1/3 cup sweet corn
1/3 cup black beans, drained and rinsed
1/4 cup cilantro, chopped
1 tablespoon ground cumin
1/2 tablespoon chili powder
1 teaspoon each of salt & pepper
1/2 tablespoon smoked paprika

diced avocados
tomato slices
cheddar cheese
lime wedges

4-6 soft kaiser rolls or hamburger buns


Place large skillet over medium heat and melt 1/2 tablespoon butter. Saute onions, red pepper and garlic until tender, about 5 minutes. Remove from heat and stir in corn, black beans, salt and pepper to taste.

In a large bowl, combine ground turkey, sauteed vegetables, and seasonings. Divide into 6 patties {or 4 large patties}.

In the same large skillet the veggies were sauteed in, place over medium high heat again and melt half the remaining butter {which should be 3/4 tablespoon}. Cook burgers in two batches until thoroughly cooked, about 4 minutes per side. Remove and place in oven to keep warm or serve immediately on buns with desired toppings.

  7. Are you able to grill these burgers? If so, how high of heat and for how long on each side?

    • Yes! I’d do it over medium heat for 5-7 minutes per side.

  9. Hi Lauren.. these are fantastic. My whole family loves them!! Anyone I serve them to always makes very positive comments. My sister lives in CO and regularly sends Mexican oregano and NM chili powder, so I do add those. I make these at least once a month. Thx so much for a terrific recipe!!!!
