That’s right you crazy kids. My husband is home from Army training. Praise all things good and holy.

Pretty sure all that tough army love made him even more handsome. I know it worked wonders for his 6-pack. #swoon #mamamia

While he was away at his training, he missed his birthday! Womp womp. SO, I planned a little get-together with close friends where we had a taco bar with these skirt steak soft tacos, yummy blended drinks and ice cream cake. It was low-key, small and the perfect night!

If you know my husband AT ALL, then you know that he loves a good steak, big bowls of chocolate ice cream, anything his wife cooks {lol!!} and any and all peanut butter cups. While he was in Brazil a few years ago, he learned how to grill the most amazing meat from the locals he was serving. He brought that little nugget of information home and now it’s the only way we cook our beef. No need to mess with marinades or anything. This is the way to make it.  You are going to be so surprised how simple this method is, and how flavorful your meat ends up being. Try it out and you be the judge!

Here’s how you do it:

Start by liberally salting your skirt steaks with rock salt on both sides. We didn’t have anything but coarse sea salt, so that’s what we used. Let it sit out for 30 minutes so it comes to room temperature.

Place your meat onto a preheated grill and….

douse with a little water. Water is the secret ingredient!! It helps the salt dissolve into the meat so it’s completely seasoned all the way through.

Turn the meat over, add on more water and more salt. Keep flipping the meat every few minutes using the water dousing-salt sprinkling method each time you turn it until it’s cooked to your liking.

Remove from the grill, cover with foil and rest 10 minutes before slicing across the grain.

Serve it up in warm corn and flour tortillas with sour cream, avocado, cheese, pico de gallo and my Grilled Corn Salsa. They seriously tasted like they were from a restaurant. So so good! All our friends agreed, these were ridiculous.

Skirt Steak Tacos

Skirt Steak Tacos are an easy and super delicious Mexican inspired meal that is perfect for summer. Load it up with your favorite toppings!

Cook Time 10 minutes
Total Time 45 minutes

Ingredients

  • 2 lbs skirt steak about 1/2 inch thick
  • water
  • coarse sea salt
  • 1 recipe Grilled Corn Salsa*
  • pico de gallo
  • warmed corn tortillas or flour tortillas
  • sour cream
  • grated cheese
  • blue cheese if you're feeling adventurous
  • avocado
  • cilantro
  • any other desired toppings

Instructions

  • Remove skirt steaks from fridge and bring to room temperature for 30 minutes.
  • Preheat outdoor grill to a medium flame.
  • Generously sprinkle both sides of meat with salt and massage into meat. Place on grill and douse with a little water. This will help the salt dissolve and seep into the meat. Once the one side is browned well with grill marks, turn over, sprinkle on more water and salt. Cook this side until browned and grill marks appear.
  • Continue turning, dousing and sprinkling until meat is cooked to desired doneness. Remove from grill, cover with foil and rest 7-10 minutes.
  • Slice across the grain into thin slices. Serve in warm tortillas with corn salsa, pico, and any other desired toppings.
