 Simple Orange Almond Granola

I don’t know why it has taken me so long to post this recipe, but finally here it is. This granola is one of my staples that I always have on hand. It’s easy to make, it’s healthy and we all love it–even my two year old! She requests it for afternoon snacks!

I love granola for a variety of reasons:

(1) it’s adaptable- anyone can take a basic recipe and change it to their preferences. Add in what you like and take out what you don’t.

(2) It’s usually pretty healthy- I try to limit the sugar and the butter in this recipe so that each 1/2 cup serving is around 200 calories. It sounds like a lot, but next time you go shopping, take a look at the nutritional information on the granola you buy. They are loaded with sugar, fat, preservatives and chemicals and typically will be upwards of  300 calories. Seriously. This brings me to………

(3) You know exactly what is going into your granola when you make it at home- I like having the peace of mind associated to knowing exactly what I’m consuming, but more importantly, my child. If I read a label and I can’t pronounce some of the ingredients then I usually don’t buy it. Also, growing up, my Mom taught me how to read the ingredients label. I vividly remember walking down the cereal aisle with her asking her to buy fruit loops and lucky charms. She simply said “read the label. If sugar is one of the first three ingredients then we won’t buy it.” Needless to say, we ate a lot of shredded wheat.

(4) It’s cheaper to make it at home- oats are the main ingredient and then from there you can add what you like. Everything I put into my granola, I usually have on hand at all times. Feel free to switch it up!

As you can see, I keep mine very simple and plain. There really are only 3 main ingredients: oats, almonds and coconut. Honestly, I couldn’t be bothered with all the other stuff you usually find in granola like dried fruit. However, the taste of this stuff is so yummy! I flavor mine with honey, cinnamon, vanilla extract and orange zest.  Yes, orange zest. It’s just a light background flavor but you can definitely taste that it’s there. Everyone in this house that has tried this granola has liked it. And, it’s ready to eat in an hour. Not too bad!

So, be sure to enjoy your weekend and whip up a batch of this granola! It keeps for a long time in air tight containers, but my guess is it won’t last long!

Orange Granola Recipe

Instructions

  • Preheat oven to 275 degrees.
  • Pour oats, coconut and almonds onto large baking sheet with high sides.
  • In small bowl, mix butter, honey and brown sugar together. Microwave on high for about 1 minute or until sugar is mostly dissolved. Stir in remaining ingredients and pour over ingredients on baking sheet. Mix to combine. {I find it easiest to just stir this around with my hands for a few minutes to make sure everything is coated evenly.} Spread granola mixture evenly on tray and bake 60 minutes stirring every 20 minutes.
  • Cool on sheet tray and store in air tight containers.

    This is in the oven right now. I added some flax seed and wheat germ, too. Can’t wait to try it for breakfast in the morning…or maybe a snack tonight if I can’t wait that long.

    Never thought of this. It seems to be a great idea for breakfast. I always try to eat healthy and in the hunt for great recipies. This one fits perefectly.
