Rolo Stuffed Butterfinger Truffles

IMG_0215So, I’ve been a little obsessed about the homemade butterfinger craze. It’s all over Pinterest and I kind of only want to eat butterfingers for the rest of time. Growing up I HATED butterfingers. I always traded them for snickers and reese’s peanut butter cups to rid my Halloween candy stash from such blasphemy. Once I met my husband, I sort of had to accept the fact that there would be butterfingers around *shudder* because they are one of his favorite chocolate bars. {PS-do you say candy bar or chocolate bar?}

Well, one day for some strange reason I felt the need to knock a few back. And whaddayaknow? I liked them. Why I never liked them before I’ll never know.

I was a weird kid.

Case in point: I hated fruit.

See? WEIRD kid.

ANYWAYS.

With Halloween nearing, I’ve got a plethora of candy lying around…So instead of hiding it from my husband and eating it all myself saving it for the trick-or-treaters, I decided to make something a little on the creative side with the homemade butterfinger concoction. YOU GUYS. I’m in love!! The chocolate and caramel rolos mixed with the peanut butter butterfinger mix is amazing!! It’s not the *exact* consistency that a real butterfinger would be, but the taste is spot on. Be aware that they are ridiculously simple. Also: 4 ingredients only. Snap. Want to make some of these babies?

Just as I suspected.

Here’s how you make ’em:IMG_0173Start out by opening a package of candy corn. I’m not a fan of these on their own, but man oh man are they great in this recipe!IMG_0175Melt 1 cup of these in the microwave, stirring every 20-30 seconds.IMG_0177Measure out 3/4 cup peanut butter and stir.
IMG_0179After a minute or two of stirring, the mixture should come together and start to harden slightly.IMG_0185Scoop into 16 even balls. Each ball should be about 2 teaspoons.IMG_0182Now you can unwrap your rolo’s. You need 16–2 packages of them.
IMG_0193Stuff one rolo into each ball and then roll to be smooth.IMG_0195Roll each truffle in some powdered sugar and that’s it!IMG_0201I waited a few minutes for these to harden completely before serving, but you can eat them when and how you like.IMG_0204At first they look inconspicuous, but then you take a bite and realize the goodness that you are consuming. Yum yum yum.

Rolo Stuffed Butterfinger Truffles

An easy and fun treat for Halloween! Soft Butterfinger Truffles stuffed with Rolos all powdered with sugar, so yummy!
servings 16 truffles
Prep Time 15 minutes
Cook Time 2 minutes
Total Time 17 minutes

Ingredients

  • 1 cup candy corn
  • 3/4 cup smooth peanut butter I used Jif
  • 16 Rolo candies 2 rolls
  • 1/4 cup powdered sugar

Instructions

  • Pour candy corn into large bowl. Microwave on high for 1-2 minutes, stirring frequently until completely melted. Stir in peanut butter until combined.
  • Using a 2 teaspoon size cookie scoop, create 16 even balls. Stuff 1 rolo candy into the center of each butterfinger ball and roll in powdered sugar. Cool a few minutes before enjoying.

    I don’t have a microwave. Will the candy corn melt in a double boiler? Do I need to add anything to them while they’re melting to get the consistency? These look so good and I’d love to try them!!

    Melted candy corn?! So smart!!! PS–I used to (don’t judge, I was a weird kid too) suck all the chocolate coating off the outside of butterfingers, then eat the crunchy inside. It grosses me out when I think about it now.
