Old Fashioned Pumpkin Donuts

I have been testing this recipe again and again and finally, FINALLY have an amazing light and tasty cake donut to share today! I was so enveloped in this process that I forgot to post another recipe last week. Oopsie!! But I promise this one will make up for it 😉

Not only do I have the photographic evidence of all the donuts I’ve made over and over this past week, I have the number on my scale proving, in fact, that those 5 dozen donuts went straight to my butt.

But, mama don’t care because it was oh so worth it!

I hate a dense and dry cake donut. You’ve had one, I’ve had one. I am very particular about my cake donuts which is why 99% of the time, I choose a yeast-raised donut. Boston Cream Donuts are my favorite, incase you were wondering. Whenever I head to a donut shop, I always go for the yeast donut. Actually, I always choose the Boston Cream Donut because old habits die hard. (Have you ever tasted a Boston Cream Donut?) As I was contemplating this life decision I’ve made the same way again and again, I thought “surely I could make a cake donut I actually like.” And so I did.

It took a while because cake donuts have a tendency to be quite dry, but, I figured out little ways here and there to make it work that all added up to an amazing amazing finished product. Things like not overworking the dough, adding in an extra egg yolk and using half and half really really helped the cause. Also, using a stickier dough to begin with, refrigerating for a few minutes to make it easier to handle and rolling it out with lots of flour was the trick. Pop the donuts into your hot oil for a quick bath and voila!

Add your glaze and that my friends is my love language.

The other day, I was talking to a friend about a cooking video we both had seen. In said video, the lady cooking was describing how easy it was to feed kids veggies by simply calling them “worms” or other fun names. Just like magic, ta-da!! Your kids will eat their vegetables! Now, while I admire the kids who eat their “worms”, I’m guessing the other 94% of kids will REFUSE. Not just say no nicely; straight up refuse. 

Thus this post was born.

I have three kids. Two out of the three are PICKY which means I can’t give them a bowl of mashed sweet potato, call it unicorn poop and all is well in the world. That’s not my reality folks and I know that’s not your reality either.

So, how do I get my kids to eat their veggies? It’s really quite simple:

I lie, I hide, I cover with Doritos, I cover with cheese, I dip in ranch. And when all else fails, I bribe.

And that right there is why I won’t win any parenting awards, but I don’t care. I’m giving my kids the nutrition they need (sometimes with a side of chips) and can fall into bed knowing they got some decent vitamins that day.

Urban Dictionary, where have you been all my life???

I just spent a good hour looking up random words and laughing to myself. Sometimes, I’ll go to my HAHAHA pinterest board and just laugh and laugh. This one gets me every time.

Do you know what the definition of tailgating is? Drinking lots of beer or makin’ food in the parking lot before a sports or other large event, (usually football or a concert.)

I would probably eat all the food and skip the sports event, thankyouverymuch. Sports are not my favorite….except maybe hockey. But that’s only because I used to work for the Ottawa Senators back in the day. Go Sens go!

Side note: after games, I used to ride up and down the elevators with some of the players of the team and tell them how well they played. This also happened when I worked at Starbucks a few years later. Lots of the players would stop by and get a coffee before their morning practices. I’d chit chat it up.
