Today I was going to post a ridiculous cookie recipe….quite similar to these, but more Halloweenie. {Haha. Weenie.} {—>yes, I’m immature. Get over it.} But then decided to post this recipe because it had less pictures to edit. I’m tired and realistic, people. Mothers, wives, bloggers, business owners, etc are busy people. Especially when they’re all ME. So give me a break. Bright and early Monday morning, you better have your fat pants ready and waiting for those little beauties that will probably give you a stroke. That’s how shockingly good they are.

Now, onto this recipe. I seem to work in food phases. There was a time where I couldn’t stop making quesadillas. Then there was the chopped salads. Then oreos. Then roasted red peppers. Then Cinnabons. And now granola. I’ve done the chocolate almond granola , orange almond granola, my popular no-bake granola bars and now a new kind of granola is here to be added to the repertoire. Something festive for the Fall that is still healthy and quite addictive.

In my mind, since this is healthy, I can eat all I want and not feel guilty. 141 calories per serving x 8.2 servings = 0 calories. Duh.

Girl math at it’s finest, let me tell you.

Loaded Pepita Granola

Anyways, just like any other granola recipe, you toss all your ingredients together in a bowl with a slurry of melted goodness and bake. Ingredients could include anything like butter, vegetable oil, maple syrup, agave, honey, brown sugar, cinnamon, oats, nuts, seeds, coconut, etc. After an hour in the oven, voila! Granola. A super simple fail-proof method with a perfect outcome! LOVES IT. And your house will smell amazing PS.

I used a bunch of random stuff I had on hand and it turned out amazing. Growing up, my Mom always used sesame seeds and sunflower seeds in her granola and it was crazy good. I still have dreams about her granola. So, adding these two were a must, plus I threw in coconut flakes, almonds and a few other surprises! So yummy and really healthy too 🙂 Add some fruit and it turns into a great breakfast. I eat this more as a snack than anything and it’s super tasty! We love it.

Pumpkin Seed Granola

You'll want to add this delicious Pumpkin Seed Granola to your repertoire. It is loaded with the wholesome goodness of oats, nuts, and coconut.
servings 11 cups
Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

  • 6 cups rolled oats
  • 1 cup raw pepitas
  • 1 cup unsalted sunflower seeds
  • 1 1/2 cups raw almonds whole
  • 1 cup unsweetened coconut flakes
  • 3 tablespoons sesame seeds

for the flavor mixture--

Instructions

  • Preheat oven to 250 degrees. Line 2 rimmed baking sheets with parchment paper and set aside.
  • Place all dry ingredients into a large bowl and stir.
  • Melt butter, maple syrup and brown sugar together in a small bowl in the microwave, about 1 minute. Stir in vanilla, and spices. Pour entire contents over dry ingredients in bowl. Stir to coat evenly and spread evenly between 2 baking sheets.
  • Bake 1 hour or until very golden brown. Remove from oven, cool completely, then store in air tight containers for up to 2 weeks...that is if it lasts that long.

    I just made a batch of this and can’t wait to eat it. It just came out of the oven and my house smells soooo yumm!! I am drying out banana chips now to put with it and next time I go to the store, I will buy some cranberries to add too. Thank you so much for sharing this.

    hey, lauren, this looks fantastic. one issue i have is that i don’t eat refined sugar, so i’m wondering if i could substitute honey or molasses for the brown sugar part, and, if so, will there be a moisture problem?

    Oh girl you made my heart sing…. umm pepitas and granola? in the same mix? be still my beating heart! i am now off to the store to pick up some more raw almonds because mine went missing. (p.s. i found the empty tupperware container in a certain teenager’s room… like they are “allowed” food in their rooms or i wouldn’t go hunting for the missing container.. teenagers! but at least they are eating healthy!)
