I meant to post this recipe a few days ago because its what I’ve been CHUGGING…trying to get rid this cold (and subsequent man voice.)

Did you know that Portland got me hooked onto juicing? That city certainly knows their health food.

That city also knows their pie. I’m talkin’ about you,  Tilt. But I digress.

There are lots of little juice bars and health food stores in and around the downtown area that made amazing concoctions, but when it came to recreating them at home, my husband was and continues to be the real professional at juicing. But since he’s gone until June, mama had to take the reins.

I had a version of this liquid sunshine juice several times after I gave birth to Eddie. I was craving juice for a good two months after I gave birth to that little seven pound thirteen ounce nugget. Pretty sure he was sucking the life right out of me. HA! But seriously…

Anyways, as soon as this virus started hitting this household, I started making juices to give our bodies a boost to help our immune systems. Lots of citrus, carrots, cucumber, apple and ginger! I swear, the citrus/ginger combo works so well!! I started feeling better-ish and I sure felt good about drinking all these nutrients! I think it was mostly psychological for me, but whatever.

For this actual recipe, you will need a juicer. We have a middle of the road one. Not too cheap, but not crazy expensive either. It’s been working well for us the last few years 🙂

Anyways, besides the juicer and the produce, that’s all you’ll need to recreate this juice at home. It tastes really good and fresh, and I promise it doesn’t taste anything like grass or the like.

Press everything through the juicer and enjoy!

In my ingredients list, I call for kale. In these photos, the juice does not contain the kale! That’s because I juiced the kale separately and added a few splashed of it in later. The kale will turn your juice a funky green color. Don’t be alarmed! It’s still very delicious!

If you think you don’t like ginger, don’t add it in, although a little ginger kick is good for the body!! I’d recommend starting with half the amount of ginger stated and working up from there 🙂

This is the juicer we own. It is great and we have’t had any problems with it. If you have a juicer, bottle brushes work really well to clean it!! They are skinny, so they can reach into the small spaces that a sponge or a cloth wouldn’t be able to reach.

Ingredients

  • 2 Fuji apples
  • 3 naval oranges peeled
  • 2 ruby red grapefruits peeled
  • 1 peeled cucumber
  • 1 1/2 inch piece ginger peeled
  • 3 large carrots washed
  • 1 big bunch kale* optional

Instructions

  • Wash and prepare ingredients.
  • Juice all ingredients with your juicer and enjoy immediately.
  • *The kale will turn your juice a funky green color. Don't be alarmed! It's still very delicious! For these photos, I juiced the kale separately and added a few splashes of it in later.
