Eggnog Rice Krispie Treats

IMG_0063I’ve got some weird and delicious treats for you today.

Have any of you wonderful people ever made Egg Nog Rice Krispie Treats before? Probably not.

How do I know this?

Because I googled the recipe and hardly anything popped up. And the ones that did really didn’t seem to be anything to write home about. Seriously BOOOOORING.

So being the good samaritan that I am, made you all a recipe for some seriously amazing, chewy and delicious Egg Nog-flavored Rice Krispie Treats. {‘Cause I know you all are looking a little too skinny this holiday season ;)} No actual egg nog is in the rice krispie treats because that would have made them soggy.

Soggy things should be illegal.

Also, the word ‘soggy’ gives me the heebie jeebies.

These treats are chewy, lightly crunchy, very sweet and flavored with rum extract and nutmeg. These taste spot on and get even better with a little egg nog glaze….which IS made with actual egg not and powdered sugar.

After a few minutes of drizzling, this stuff will dry onto each piece thus making these super easy to transport to any party or Christmas function. IMG_0027Did I mention I added in extra mini marshmallows? Well I did. I love the extra chewiness, plus I think it makes them look extra appealing. This was before I added on the glaze. Eggnog Rice Krispie Treats

Eggnog Rice Krispie Treats are chewy, lightly crunchy, very sweet and flavored with rum extract and nutmeg.
servings 18 pieces
Prep Time 30 minutes
Cook Time 5 minutes
Total Time 35 minutes

Ingredients

  • 3 tablespoons butter
  • 6 cups mini marshmallows divided
  • 1/2 teaspoon rum extract
  • 1/4 teaspoon ground nutmeg
  • 6 cups rice krispies cereal

for the glaze {optional}-

Instructions

  • Spray 9x13 pan with non-stick cooking spray and set aside.
  • In a large pot, melt butter and 4 cups marshmallows over medium low heat until marshmallows are melted completely. Remove from heat. Stir in run extract and nutmeg. Pour in cereal and stir to coat in marshmallow. Stir in remaining 2 cups mini marshmallows. Pour into prepared pan and press down with buttered fingers. Cool to room temperature, about 20-30 minutes.
  • In a small bowl, stir powdered sugar and egg nog together until smooth. Drizzle over bars and sprinkle with more nutmeg. Cut into bars and serve.

    My hubby is going to totally freak out over these! I am loving this eggnog drizzle. I don’t know if it will actually make it to the Rice Krispie treat before I eat it all though….
    I love the creativity here.. You can never go wrong with egg nog or Rice Krispie treats!
