I really have been good about not craving sugary things. I think it has to do with the hormones of growing a little boy versus a little girl. With Brooke, I couldn’t get enough sugar. These days, I just want a plate of salty fries. Seriously. Leave the burgers, just give me the fries.

Do I eat fries all the live long day? No. But I sure do dream about them. Along with lots of other random crap. For instance: I had a dream that I did a cello duet with one of my friends in church.

Do I play the cello? No. But apparently I’m amazing.

I had another dream about my husband going to the doctor and being told that he had two weeks to live. Was he sad about this news? NO. He was perfectly content to die and I was mad.

Then he died and I was sad. But still mad that he was happy to be 6 feet under.

The things that I have to deal with in this crazy mind of mine!! Ahhhh!

Moral of the story: I’m always and forevermore craving fries.

Also, there has been a lack of dessert posts on my blog because of said cravings. For that I apologize.

But I’ve noticed this void and have created something involving cookies, ice cream and frosting in new and delicious ways!

IMG_0132Are you all riveted by this treat? You should be. It’s over the top sweet and perfect for kiddie birthday parties, summertime picnics or just when you need a pick me up.

And all you need is refrigerated sugar cookie dough, vanilla ice cream and that funfetti vanilla frosting in a can.

I know this is all processed food that I usually don’t buy, but I’m large and pregnant and lacking energy. Therefore, give me a break. *Also, my 4 year old is very convincing when sprinkles are involved.

So, all you do is press the cookie dough into a small jelly roll pan and bake. Then you mix the frosting with the ice cream and sprinkles and spread overtop the cookie bottom. Top with the rest of the sprinkles and freeze. Cut into squares and that’s it! Easy peasy.

IMG_0149The only thing you need to be warned about is over baking the cookie bottom. If it’s too hard, it’ll be super crispy and hard to cut/eat once its frozen. So beware!

Other then that, this is fail proof. Enjoy your imminent sugar high, friends 🙂

Funfetti Ice Cream Cake

When you're in a pinch and need a fast dessert, Funfetti Ice Cream Cake is for you! I took a lot of help from the store to make this yummy kid-friendly treat!

Total Time 2 hours 12 minutes

Ingredients

  • 16.5 oz refrigerated sugar cookie dough
  • 6 cups vanilla ice cream
  • 15.6 oz prepared confetti funfetti vanilla frosting

Instructions

  • Preheat oven to 350 degrees. Line small jelly roll pan {1 x 13 x 9.5} with parchment paper and spread cookie dough in an even layer across the bottom. Bake 10-12 minutes or until edges are golden brown. Cool to room temperature, about 20 minutes.
  • Bring vanilla ice cream out of freezer and sit on counter for 10 minutes or easy scooping. Scoop vanilla ice cream and entire tub of vanilla frosting into the bowl of a stand mixer and stir to combine. Spoon onto baked cookie bottom and stir in half the sprinkles that came with the frosting. Top with remaining half. Freeze until solid, about an hour. Cut into squares and serve.

    My sister is the same way, she hates sweets when she’s pregnant with boys. So the only thing I’m confused about is this sentence:
    Spoon onto baked cookie bottom and stir in half the sprinkles that came with the frosting
    How are you supposed to get it on the bottom of the cookie? Unless you take it out of the pan, put the ice cream, put it back on, and then put the ice cream on top.
