This Almond Joy Energy Balls Recipe is bursting with flavor. Made with crushed almonds, held together by honey and rolled into coconut shreds.

I first saw Energy Balls from my friend Natalie. Her energy balls, snack balls, power truffles recipe came into my mind, then things weren’t working as planned. So, I scrapped my original plan and rolled these babies out and coated them in some coconut. Not too sweet, good texture, soft, chocolatey, nutty with a hint of coconut that takes about 15 minutes to make. AND you can employ little hands with the rolling. Best idea ever.

Energy Balls Recipe

Seriously, this energy balls recipe calls for only 5 raw ingredients to make something sweet but full of good sources of energy. Here’s what you’ll need:

  • Almonds – the base of this recipe is the almonds. They are full of healthy fats and protein.
  • Cocoa Powder – gives it that chocolatey taste!
  • Honey – using a natural sweetener instead of processed sugars. Plus no grainy sugar texture.
  • Coconut Oil – also full of healthy fats and helps hold these balls together.
  • Coconut Shreds – for texture and flavor. Chocolate and coconut go hand in hand.

How to Make Energy Balls

  1. Pour toasted almonds (mine were lightly salted) into the bowl of a food processor. Pulse until nuts turn into a coarse meal.
  2. Pour in cocoa powder, honey, and coconut oil (melt for easier mixing). Continue pulsing until a very thick mixture forms. You may have to scrape down the sides a few times. Also, feel free to add in splashes of water or more honey to get the mixture moving in the bowl, but be careful not to add too much.
  3. Once you have a thick paste, scoop into small balls using a cookie scoop and lay on a sheet of waxing paper. Roll in shredded coconut or chopped almonds.
  4. Store in an airtight container until ready to eat. If these are too soft for you, store in the fridge to firm them up.

Make-Ahead

These are the perfect make-ahead snacks! To keep them good for even longer store them in the fridge for up to 2 weeks. Or you can freeze them for up to 3 months. Just don’t forget to thaw them before eating!

This means, make a double batch, one for this coming week and the other you can store in the freezer.

Ingredients

  • 1 1/2 cups almonds toasted and chopped

  • sweetened shredded coconut or chopped almonds for garnish

    Hooray! Almost all of the recipes I’ve had/made/seen use medjools which are both expensive and…blah. Not my thing. I am glad to know there is a recipe out there for people who like balls and nuts but not dates!

    I’m also pretty sure there’s an inappropriate joke in there somewhere but I’m not touching it.

    ‘Balls’ are definitely a great way to get a nutritious snack or use during exercise. Various fruits (including dates) make for a thicker consistency and you don’t have to use as much sweetener.

    Oh that Natalie, what a genius she is! These energy balls look awesome. I often see energy ball/bar recipes that are chockerblock full of sugar, so I am psyched to see this recipe incorporates a raw ingredient as the sweetener. This give you REAL energy, woop woop! Looks great!

    I’m always on the lookout for healthy ways to allow my kids to have a treat! I have made these kind of ‘brownie’ balls too…only instead of oil and honey we use dates (chopped or whole). It’s still really sweet and wonderful…but adds a bit of fruit to the mix and makes them officially ‘raw’ (if you’re using raw almonds). I’m going to try these too though–and see which the kids like best! Using raw honey and the cold-pressed extra virgin coconut oil will still makes these a health sensation as a treat!! THANKS!!
