Well, howdy friends! It’s been a while since I’ve brought you a dessert recipe, so here lies an amazing one that I hope will be reason enough to stop what you’re doing to make immediately.

This Chocolate Skillet S’mores Cookie is to die for and is so so simple to make. If you have any experience baking cookies, then this recipe will come easy to you. Lots of basic ingredients thrown together to create a crispy edged, soft and chewy skillet cookie that happens to be filled with all the good stuff that makes s’mores so amazing.

You’re going to want to make this before summer is through. My kids just about DIED when they saw this being pulled from the oven 🙂

Main Ingredients Needed

Simple ingredients come together to create an amazing Chocolate S’mores Skillet Cookie, here is what you need:

  • Butter-Flavored Shortening – I like using butter-flavored shortening for this recipe but you could just as easily replace this with actual butter.
  • Cold Water – this helps everything stick together.
  • Canola Oil – some more fat for moisture.
  • Sugar + Brown Sugar – to sweeten! Brown sugar is specifically used to make a soft cookie as well.
  • Eggs – used for texture and structure.
  • Vanilla – for flavor.
  • Flour – this fills out the rest of the cookie.
  • Cocoa Powder – this makes things chocolatey.
  • Baking Soda + Baking Powder – used for lift and rise.
  • Salt – to balance out the sweet flavors.
  • Marshmallows – these are cut in half and smooshed in the middle of two cookie dough layers.
  • Milk Chocolate – you could also use chocolate chips here. Smooshed between the layers of cookie dough and on top!
  • Ice Cream + Chocolate Syrup – these are used as toppings and perfectly go with the warm skillet cookie.

This is already such a decadent skillet cookie recipe but if you are looking to spice it up even more, see my suggestions down below.

  • Use a Smaller Skillet. If you have several smaller skillets, these would be so cute as individual servings!
  • Use something other than a Skillet. Or if you don’t have a skillet at all, try using a 9×9 baking dish.
  • Add Nuts. These would make a great addition to this recipe, nutty and crunchy goodness!
  • Add Peanut Butter. Or if you love peanut butter with your s’mores, drizzle on some warm peanut butter.
  • Add More Chocolate. Or make this a chocolate lovers dream and add white chocolate, dark chocolate and milk chocolate pieces.

Start by taking butter-flavored shortening and throw it into a bowl with a little water, some canola oil, sugar, and brown sugar. Mix it together until light and fluffy and then stir in two eggs and some vanilla.

Next, come the dry ingredients! Stir this well until it all comes together, being sure to scrape the bottom and the sides thoroughly. Cookie dough is a beautiful thing.

Assemble in Skillet Then Bake

Spread half the cookie dough into the bottom of a cast-iron skillet and top with marshmallows cut in half and chocolate pieces. Then top with more cookie dough and more chocolate then bake!

There will be a little dough left, so scoop these out into cookies and bake. We will crumble these over the top and use them as a garnish! Or I guess you could just eat them too 🙂

Top with Ice Cream + Serve

I waited a few minutes for my cookie to cool so it wouldn’t fall apart to serve, but feel free to just scoop the hot cookie into bowls instead of creating actual pieces. After about 20 minutes it’s still plenty warm but retained its shape much better.

I topped mine with a scoop of ice cream, chocolate syrup, and some cookie crumbles because why not. Also, it makes it look much fancier than it actually is. Winning at life. I love all that puffy marshmallow poking through with the melty chocolate too!! YUM. Are you drooling yet?

Chocolate S’mores Skillet Cookie

  • Preheat oven to 325 degrees. Lightly spray a 12-inch cast iron skillet with nonstick cooking spray and set aside. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, mix butter-flavored shortening with water, canola oil, sugar, and brown sugar together until light and fluffy. Scrape the sides of the bowl and mix again.

  • Add in the eggs and vanilla and stir again.

  • Measure out all the dry ingredients into the bowl and stir slowly until just incorporated. Scrape the bowl really well and stir again briefly to mix.

  • Divide cookie dough in half and spread one half in the bottom of the cast iron skillet. Gently press marshmallow halves and chocolate into the cookie dough. Take the remaining half of the cookie dough and divide in half again.

  • With one of the halves of dough, press between your hands to flatten slightly and place overtop the marshmallows and chocolate until mostly covered.

  • Top with remaining chocolate pieces and bake 22-25 minutes. Remove from oven and cool 10-20 minutes.

  • With remaining cookie dough, scoop into 10 small cookies and bake at 350 degrees for 6-7 minutes.

  • To serve, cut skillet cookie into pieces and top with ice cream and chocolate syrup. Crumble baked cookies into crumbs over top each piece and serve.

      No, haven’t tried it with gf flour. BUT, I have used Pamela’s gluten free all purpose blend and know it works well, tastes like regular all purpose flour and you can sub it 1:1.

    Oh my gosh! This looks amazing!! I would love to make this but I don’t have any cast iron skillets. I have a feeling a regular skillet wouldn’t be the same. Are there any alternative baking dishes I could use instead?
