Chocolate Covered Strawberry Cookies

Chocolate Covered Strawberry Cookies 1 Oh yes. I went there. As if chocolate covered strawberries couldn’t get any better….I’ve shoved them into some cookies and ultimately created a monster. You guys, these are the bomb. Especially all that chocolate drizzled over top. #holyamazingnessbatman Whoever doesn’t like chocolate is crazy. Well, in my opinion, they are–which isn’t saying much. Especially since I’ve been having those  moose dreams. I’m not exactly the poster child for sanity.

But that’s neither here nor there.

What I’m trying to say is chocolate is delicious and I use it like crack. Chocolate + strawberries is heavenly. Throw some cookies into the mix and I think I may just pass out. I’ll try to stay conscience for the rest of this post…

Try to get around to making these this long weekend 🙂 The roasted tangy strawberry with the soft sweet cookie and melty chocolate is BLISS. After one bite, these became one of my husband’s favorite cookies EVER {next to these and these.} That’s saying A LOT. And they’re similar to chocolate chip cookies but instead of adding chocolate, you add strawberries. Here’s how you make them:

Strawberry Cookies 1Start by creaming butter and sugar.

Strawberry Cookies 2Add some vanilla and an egg {not pictured. duh.}

Strawberry cookies 10Once the wet ingredients are all in, stir in all the dry until just combined. Stir the diced fresh strawberries in by hand and refrigerate the dough for 30 minutes.

Strawberry Cookies 6Scoop out the chilled dough and bake 🙂 Super easy!

Strawberry Cookies 7Bake until the edges just barely turn brown. Cool 5 minutes then transfer to a cooling rack.

Strawberry Cookies 8Melt these chocolate chips with a little milk and drizzle over top of the cookies!

Chocolate Covered Strawberry CookiesVoila! Fancy looking yummy tasting cookies perfect for Memorial Day! 🙂 Enjoy, friends!
