I’ve been sitting on this Chinese Chicken Salad recipe for a while but have been waiting to post it because I have a video to go with! Hooray! Scroll down to the recipe card to see the video! Anyways, this is a simple and tasty way to enjoy your greens! A little sweet and a little crunch with lots of veggies and protein. This is my kind of meal!

Main Ingredients Needed

This salad recipe has a bunch of fun ingredients that really makes it so good to eat!

  • Washed Lettuce – beautiful green fresh lettuce. Nice and crunchy too!
  • Red Cabbage, Red Pepper, and Mandarin Oranges – talk about colorful and tasty! Zingy, sweet with a slight bite.
  • Chicken – cooked and shredded! Use leftovers to quickly throw this salad together.
  • Scallions – oniony goodness. Leave out if you want.
  • Chow Mein Noodles – this is where that essential crunch comes from.

How to Make Chinese Chicken Salad

  1. Wash, dice, and chop all salad ingredients.
  2. Place all salad ingredients into a bowl. Set aside.

Chinese Chicken Salad Dressing

This dressing is made from garlic, grated ginger, brown sugar, sesame oil, soy sauce, white vinegar, and canola oil. It has a ton of depth and is a perfect complement to this recipe. Here’s how to make it:

  1. In a small bowl, whisk together all ingredients for the dressing.
  2. Toss salad with dressing and serve immediately.

Feel free to adapt the ingredients in the dressing to suit your tastebuds. For instance, if you hate ginger, reduce the amount you use. If you like sweet dressings, add more brown sugar. Do you see where I’m going with this?

If you didn’t want to make the homemade dressing, this store-bought one is pretty tasty.

Ingredients

for the salad -

  • 5 oz. pre-washed lettuce
  • 1/4 head red cabbage shredded
  • 1/2 lb. chicken cooked and shredded
  • 1 red pepper diced
  • 4 scallions sliced
  • 1 can mandarin oranges drained
  • 1/2 cup chow mein noodles

for the dressing -

  • 2 teaspoons minced garlic
  • 2 teaspoons grated ginger
  • 2 1/2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons white vinegar
  • 3 tablespoons canola oil

Instructions

  • Place all salad ingredients into a bowl. Set aside.

    I absolutely love this salad! I have been looking for a great Chinese Chicken Salad Recipe, and this one is easy to put together, does not take a lot of fancy ingredients, and is delicious!
