Finally a salad recipe!!

After going to Disney World and eating everything in sight, it’s about time I got my act together and put something green in my mouth (besides lime sour patch kids).
There were a good two months where I was doing really well with my eating habits…sort of. In December, I got a bad cold then the stomach flu and then another bad cold which brought be 3 pounds below my goal weight. Then January came and so did my well-meaning resolutions. I was doing so well!

Now we’re half way through February and I’ve lost the will to cook/exercise/drink water/go to bed early/anything else on my ‘get healthier’ to do list.

Anyone else in the same boat as me? Someone out there better raise their virtual hand.

I don’t know if it’s the winter weather, my sick baby, my lack of sleep or my love of bread that has me in this funk.

Did I mention Eddie has a double ear infection? I took him to the doctor a few days ago and turns out he wasn’t being cranky because he hates me. That little guy was literally miserable. Poor baby 🙁

So, my body/eating habits are obviously not my current priority. Eddie-man is. And trying to catch up on my sleep. And eating this donut bread. (It’s addicting. Don’t make it.)

I’m not going to get on the scale again until another stomach bug hits.

Crockpot recipes are always so ugly.

There. I said it.

I guess this one turned out ok, but generally, as a rule of thumb, they aren’t the prettiest ones on the block.

Even though this is a true statement, crockpot recipes always seem to be the most delicious. Funny how that works. Brown food tastes good and crockpots create brown food.

So there you have it. My deep thoughts for this Friday morning.

In other news, my daughter has had the last two days off of school for parent-teacher conferences and both my husband and I are going crazy. We love our children dearly {most of the time} {just kidding Mom; we love them all the time} but are grateful for the teachers, bus drivers, friends and other people who take them off our hands for 8 hours a day.

Heaven help us get our work slash anything else accomplished this weekend.

PS- our babysitter is out of town, adding insult to injury. It is not the best. Margaret, if you’re reading this, send help.

I am a mom to three kids: Brooke-7, Blake-3 and Eddie-8 months.

After I had Eddie, I was convinced that the older he got, the more my life would get easier. {Please try to contain your laughter.}

I’m not sure if I was optimistically hopeful or blissfully unaware but, clearly I forgot that I’d have THREE children to care for, plus a house to keep tidy{ish}, meals to cook, dishes to clean, laundry to fold and oh ya! manage this wee ol’ blog of mine.

I was and probably still am the epitome of a busy working mother. My to do list is looooooong, ya’ll.

So, anywhere I can catch a break/save time/save sanity/not have to work harder then necessary, I do it.

It’s why I use parchment paper on every surface possible.

Hello October! We are just zooming through these last few months of the year! Does anyone feel like we are moving at lightening speed?

Typically, my life turns into madness this time of year. As the holidays and parties in these last 3 months approach us, my schedule gets jammed. Last year, I started posting lots of last minute recipes that became staples at my house for October, November and December. I’m talking really fast dinners, desserts, and party foods. You never know when you’ll need to whip something up fast! {Hello Thanksgiving, Christmas, Birthdays, Holidays, Halloween, New Years, and other miscellaneous parties and get togethers.} So that is what has been on my mind when I came up with these Hairy Spider Cookies.

By taking a few shortcuts, you can have these ready to go in about an hour. So much easier and faster than trying to find something as tasty from the store. Not to mention as cute 😉

My poor Brookie Cookie just randomly and very suddenly came down with the stomach flu. Poor thing! So far she’s lost her cookie 6 times in the last 2 1/2 hours. The last time she was sick like this was when she was 4 years old when Blake was Eddie’s age {7 months}. My husband recalls that she threw up 14 times in one night!!! I seriously hope that is not what tonight will be looking like. Poor thing!

Needless to say, I’m a little preoccupied to think of anything funny or witty to write about. And odds are I’ll have this awful flu bug tomorrow. Say it isn’t so! I have awful luck.


I’ve been sitting on this recipe for a while but have been waiting to post it because I have a video to go with! Hooray!

I’m starting to get more and more into these fun tutorial videos {and some other fun family vlog videos too} so I’m hoping to share more and more of them as time goes on.

Anyways, this is a simple and tasty way to enjoy your greens! A little sweet and a little crunch with lots of veggies and protein. This is my kind of meal!

One more week until Labor Day weekend! Yay!

Even though my daughter has started back at school, we always love having the labor day weekend for fun, relaxing family time. When we were living in Oregon, it was tradition to get a vacation rental at the coast with many of my husband’s siblings. Now that we’ve moved away, we need to find a new tradition of sorts. We’re working on a last minute family trip…hopefully we’ll find a good spot to go 🙂

But in the mean time, I’m sharing a tasty grilling recipe that you can use outdoors {or indoors if you happen to have bad weather.} The Oregon Coast is unpredictable with its weather so there were many a year when we were cooking and hanging out inside instead of at the beach. Hence this recipe!

If you haven’t had a grilled chicken caesar salad before, then you are in for a treat. It’s just as tasty as a regular caesar salad, but with a smokey flavor that cannot be beat 🙂 Super yummy and relatively healthy as long as you don’t go crazy on the dressing.

So, this is a recipe a little out of the ordinary, but I’ve had a few of my friends ask me about this specific recipe, so I thought ‘why not throw it on the blog?’

Back in the day before I was pregnant with Eddie, I was doing a few rounds of the 24-Day Challenge. This helped me reign in my eating habits and actually helped me lose a little weight, and a lot of inches, especially around my waist. Then I got pregnant and had my sweet little Ed and now after 6 months of hard work, I’m just about to where I want to be. Hooray!

I might do another 24-Day Challenge because I know it will work and I know I can do it. It doesn’t take all my carbs away from me and I typically feel amazing once its over. {I feel like I’m about to murder someone after getting a horrible cold this past weekend while in the middle of Whole30.}

But, I digress.

Hola Friends! This week, I’m still in the process of unpacking and handling 3 kids with no husband, SO! Cranky Eddie is in this video. I know a lot of you loved seeing him last week, probably because he was all smiley, but this week…..notsomuch.

So, this week for Beauty Tuesday, I’m talking all about what I’ve been doing for losing that baby weight. I mean, I’m not doing a TON, and of course I could be doing more, but for now at this point in my mothering career, slow and steady is all I can handle. I’ve noticed that I feel good about my appearance when I exercise, even if it’s just for a few minutes. It makes a world of difference for my attitude, so I’m making this a priority these days.

YOU GUYS! I did something so fun this week for Beauty Tuesday 🙂 I went to Nordstrom and got styled! It’s an absolutely FREE service that gave me one on one time with the stylist of my choice. I got so many good ideas on cute outfits, what would work well on my post-pregnant-now-nursing-body type and tried on several outfits as well. I told her I wanted to get out of my rut of not feeling cute and she was ON IT.

Welcome to Beauty Tuesday! Where I stop being a frumpy Mom and actually care about my appearance. Haha!

Between the sleepless nights that come with having a baby, being a Mom to two other kids, being a wife to a painfully good looking man and all my work that never seems to end, there ain’t a lot of time for me. Plus, having the weird not-skinny-but-not-pregnant physical attributes makes it hard to have a lot of self confidence. {Whyyyy can’t these last 12 pounds just melt away?}


So, I’m starting to do things with intention for me {and only me} to make myself feel great on the inside and out.

Up first? My hair.

I thought I needed a big drastic change to be happier with my appearance. Turns out, learning how to style my hair in a different way filled that craving and now I love the waves and the tighter curls!
