Well folks, my nightmare is nearly over!! Last night we made it to my parent’s house and I almost cried when I pulled in…six days of solo driving 2600 miles with my 3 little kids. Finally FINALLY we made it! I’m so glad and relieved I’m here.

I never thought I’d see the day when I would never want to eat a french fry again. But here I stand in revolt. I’d be ok if I lived my life without fast food, but ask me again in about two weeks 😉

My cold rages on.

My immune system left my body weeks ago and went on vacation or something. Things are not within homeostasis levels in really any part of my life. I got a cold then just as I was getting over that one, I was hit with another! Jerky germs. GET OUT OF MY BODY!!

My boys caught something too and it is not pretty. I think they have minor versions of what I have. (Thankfully its not the full-blown version!)

Since I seem to have this illness the worst and I’m the Mom and in charge of three little people and there is no Dad around to help, I haven’t been the normal ray of sunshine that I usually am. Shocking!

So, what is my answer to this problem and the rest of life’s problems? CARBS! (And Diet Coke.)

I’m not much of a stress eater, but I’ve been known to eat large quantities of anything when I’m not feeling well, emotionally or physically…or pregnant, but that’s another story.

So, I made a version of my Mom’s biscuit recipe the other day in hopes it would make me feel better and I fell in love all over again.

Yesterday when we were at Walmart, I almost *almost* bought some tomato plants. Fresh homegrown tomatoes are like candy to me. My grandma had a phenomenal garden since I can remember and her tomatoes were ahhhh-mazing. It could make any tomato hater into a tomato lover.

So, what stopped me from getting the tomato plants? I kill all plants I buy. It’s unfortunate, but true. If I happen to purchase some plants, they scream silently for weeks and somehow mysteriously die a slow and painful death, even though I give them all the water, love and sunshine they could possibly need.

I need to hire a master gardener to teach me their ways slash teach me everything I’m doing wrong because clearly I’m not cut out for this.

Anyways, I bought some baby heirloom tomatoes at the grocery store {who purchased them from farmers who actually know how to grow things} and made this Caprese Salad that you see before you. It’s very similar to this caprese salad I made two years ago, but minus all the lettuce. And since we’re on the topic of caprese salads, this watermelon version is also incredible. I also craved caprese ANYTHING nonstop during my first trimester when I was carrying Eddie.

Hey everyone! Gord and I are still enjoying our mini road trip slash work trip this week. We head back home to our kiddos tomorrow and couldn’t be more excited to see them. They are exhausting little rascals, but boy do they steal your heart.


This salad recipe is something I copied from my Mom’s recipe box about 12 years ago when I was heading to college. I think she got the recipe from a lady from our church?! Maybe. I don’t really remember. BUT–> it’s called “That Good Salad” because that is what everyone says when they try it. I’ve made this a handful of times and can completely attest that that is 100% true. The bowl gets cleaned and people ask me for the recipe.

So, there are certain people in my life that make amazing salads. My sister-in-law, Sarah, is one of these people. It doesn’t matter what is in the salad, this lady has a way with her fresh produce.

Another one of these people is my friend Monica, who, bless her heart, brought me this salad and a lasagna right after I had my baby. The lasagna was very good, but you guys….this salad was AMAZING. It was unique because the combination of ingredients within the salad was something I’ve never had before. So many different textures and flavors going on but it was the parsley dressing that made this salad so incredibly good.

Yes, it’s a thing and yes, it’s good.

Now, this isn’t the *exact* recipe, but more of a copycat version made from my hazy, post-baby, exhausted, doped up memory of what Monica brought me that Sunday night. I did ask her for the recipe, but got a wicked craving for it impatient and less than 24 hours after asking, made my own version.

YOU GUYS. It’s good. The candied walnuts, blue cheese and dressing are what take this salad over the top. Even my husband was like “this cheese in this salad is amazing!” –>coming from a man who hates smelly cheese! #miracle

There’s a new craving I’ve been having these last few weeks. Nothing wonky or totally nuts or anything…just for salad! How convenient considering I’ve gained a lot of weight this pregnancy lots of people are looking for new and healthy recipes for their new years resolutions {…not that bacon and blue cheese are healthy options, but there’s KALE!}

I’m in the very last stages of this pregnancy {2 weeks left!!!} and besides feeling nauseous from time to time, I crave NOTHING. Bowls of plain cheerios with unsweetened almond milk are where it’s at these days. That and toast. And maybe a grapefruit.

I’m a simple gal, really.

Except for this last week when all I wanted was salad. I made this Falafel Salad Bowl and devoured that in no time and then used every veggie in my fridge to dip into this homemade ranch and then I made this little gem of a lunch: BLT Chopped Salad with Basil Greek Goddess Dressing. Bacon in anything is basically a slam dunk in my book, but this dressing……YOU GUYS! Just hook me up to the IV and walk away. The creamy-garlicky-basily situation happening with all the chopped goodies in the salad were making me never want to eat anything but this salad for the rest of time. If I were to marry a salad, this would be the lucky winner.

If loving salad is wrong, I don’t want to be right.

I cannot put into words how much I crave this salad now and how freaking good it is besides just saying I CRAVE THIS SALAD and IT’S SO FREAKING GOOD.

For a while now I’ve been a little obsessed with falafel.

I think it started when I was in my first trimester sick as a dog. Nothing could be stomached. Except maybe a few sips of orange juice and an egg white mcmuffin. And then out of the blue a falafel salad from Euro House.

With pregnancy, I’ve come to not ask questions about my weird cravings.

Anyways, I love a good falafel, especially when wrapped in fresh, warm, homemade pita {specifically from Euro House}.

This is beginning to sound like a sponsored post. I assure you the owners of Euro House have no clue who I am.

The point is, me and falafel, falafel and me, have a short lived history that is proving to be not so good for my ever expanding caboose. Some would blame pregnancy, some would blame the obscene amounts of Greek Food I consume. Either way, the winds are a changing.

Today, I’m writing this post from my in-laws house. Brooke had yesterday and today off of school because of parent teacher conferences so we decided to get the heck out of town and visit Grandma and Grandpa Brennan.

As I type, my husband and his Dad are watching an Oregon football game and I am nearly dying inside because of boredom.

I just cannot for the life of me get into football. No matter how much I try, by the second quarter I usually end up online shopping browsing Pinterest for football food.

Do these smashed loaded potatoes qualify as football food? I’d like to think so. They’re like potato skins that aren’t hollowed out but still topped with all the yummy goodies you’d typically find within a potato skin.
