Making these rolls are pretty much the same thing as making a cinnamon roll, but with a few other add-ins, like pumpkin, maple syrup and nutmeg to name a few! Into my yeast dough I stir in canned pureed pumpkin which gave it a nice color and smell! You let it rise for 1-2 hours, roll it out, fill it (with the ingredients I already listed), slice, let them rise again and then bake! Sort of a lot of steps, but well worth the wait!

Of course we can’t forget about our maple glaze on top! How good do these look? Pumpkin Maple Rolls sound like a perfect weekend breakfast or treat to me. Maybe I’ll make them again! We all loved them in our house and you guys will probably love them too! Happy feasting!

“WhatamIdoinggggggg??” is what I said when I started loading up these rolls with caramel sauce, cooked apples and bitty bites of caramel candy.

“OHMYGAHHHHH” is what I said when I pulled then from the oven.

My love of food and cooking has always been with me, but didn’t really blossom until I went away to college and had to cook for myself. At first, I’d eat out a lot {hello freshman 15 25} but then I started copying my Mom’s recipes to have copies in my recipe box so those semesters away, I could make good food. Crepes was at the top of this list.

When I made them for the first time in my Sophomore year for myself {and by default for my roommates too} one of my roommates and best friends, Amy, insisted these were the best crepes she had ever had. She was the one who deemed these better than Paris crepes because she had just spent a semester studying abroad in Europe.

Surely she has been mistaken I thought. There is no possible way these could be better than the crepes you get is Paris. It’s PARIS.

But then I went to Paris last Fall and tried them for myself and by golly, I think she was right.

Thank you all so so much for your kind words of support, recommendations and overall well wishes from our last post. It’s going to be a busy and crazy adventure, but its one we are ready for! We are so excited to move to NYC and just GET THERE. For those of you worried about whether or not I will continue blogging, you can rest easy. OF COURSE I’m going to keep this up! I’ve been blogging for 7 years so far and I feel like once we are in New York, there’s going to be SO MUCH MORE to talk about. I’m so nervous and excited and nervous and excited!

Since we are moving in June and Gordon is away at training, I’m holding down the fort, trying to sell our house, keep it annoyingly clean and pack all simultaneously. It’s a circus and this mama is sick….and stressed!! We’ve had an open house and a few showings, but no bites. Mind you, it’s been on the market literally one week. So, fingers crossed we can get our beautiful dream house sold sooner than later. *tear*

These pancakes were made a few days ago when I was really starting to get hit by this virus and I had no will to live, let alone make a dinner for my children. Well, thankfully my brilliant 8 year old reminded me that we can have breakfast for dinner! Initially, Brooke wanted banana bread waffles, but waffle makers are a PAIN to clean, so I coaxed her into pancakes.

Weekday mornings at my house are madness. Getting the little people dressed and fed, diapers changed, lunches made, oldest to the bus stop etc. etc. is not my favorite thing in the world.
Those little people of mine certainly like to forget how to put pants on. *sigh*

I was reading a blog post the other day on a fancier breakfast item {read: waffles} and the author stated that she always likes to make a big breakfast for her family, like waffles, every morning. Sounds wonderful, but that would never and could never happen at my house. We are a cold-cereal-minute-oatmeal-and-maybe-cream-of-wheat-if-I’m-feeling-fancy kind of family. I suppose I went through a pancake phase, but that was 1 1/2 years and one less kid ago. Times have changed!

Sometimes I wonder why I’ve been given this evil gift of recipe development.

Usually it’s a good thing. No, a great thing! Because I can come up with delicious dinners with very little food in my pantry. However, sometimes I come up with these kinds of ridiculous concoctions that I can’t NOT eat and they do absolutely nothing for my figure.

It’s literally the only hazard of this blogging job. Maybe I should start paying myself hazard pay. Can I even do that? Would I need OSHA to come out and inspect my…..kitchen? Recipes? –>these are the things I think about late at night when I type these posts out.

I’m traveling for work and am hurrying to post this amazing recipe before I have to run off to another meeting. I was going to hold off on posting, but you guys, this is a recipe worth making {and not just because you can get your kids to eat veggies too! Mwahahaha!}

This recipe is based on my mom’s carrot muffin recipe, but I added in a bunch of fun goodies like walnuts and shredded coconut and took out a lot of the processed sugar and replaced it with maple syrup. I also added in zucchini too because….why not?!

Hold onto your hats friends, I’ve got another *fat pants* recipe for you, and this one is RIDICULOUS. I’m so so excited to be sharing this recipe with you today because it is so amazingly good!

A sweet cinnamon swirled cake, baked until perfectly moist and then dipped into melted butter and coated with cinnamon and sugar!! If that doesn’t make you excited for dessert, then I don’t know what will.

You have my friend Machel to blame. Last week, she employed me to create a clone to a very very similar item found at her grocery store a few weeks prior. I’m not one to back down from a challenge, so of course I gladly accepted and a few days later here she blows.

This is a pretty simple loaf to make, you just need to be prepared to get a little messy whilst dipping the whole loaf into melted butter…and then cinnamon and sugar.

I’m kind of in love with these Acai Bowls you guys. It’s a problem?! Ok, not really. But based on how boiling hot I’ve been with this little furnace of a baby growing burning inside of me, I’m guzzling all sorts of liquids and eating all the cold things. Smoothie bowl? Right up my alley. Considering it’s getting harder and harder for me to eat sugar, this frozen-fruit-turned-into-soft-serve-thing has become all the more appealing.

Before I ever really knew about Acai {pronounced ah-sigh-ee} Bowls, I kept seeing pictures of these gorgeous fruit filled smoothie bowls on Instagram. After a little more digging, I was able to find out WHERE to buy what I needed to make these, HOW to make them good {ie how I like them} and WHAT I needed to add to make them completely child-friendly so my kids would willingly gobble these up for breakfast or lunch.

Turns out you don’t need very much stuff to make these amazing bowls AND there are lots of options and variations so you can make them how you like.

It’s the little things, you guys.

That sentence probably doesn’t make any sense, but it’s something I’m going to be working on this year as an informal resolution of sorts: to pay attention and enjoy the little things in life.

For instance: last week, my friends came to pick me up and take me out for an impromptu birthday dinner/baby shower. I have some pretty stellar friends, you guys 🙂

They were super sneaky and made sure to get my husband in on the surprise! I had a bit of a suspicion that something was going to happen, but wasn’t quite sure what. Man oh man, sometimes when you get caught up in mothering two kids and growing a third that you forget how fun girls’ nights are on a random Monday night. There was nothing complicated or fancy about it {which is totally my style} and completely casual and fun! I suppose they could have made it more complicated {like this baby shower I threw with a friend….oops?!} but honestly, I wouldn’t of had it any other way.
The more I think about this, the more I realize how much I enjoy the little, uncomplicated aspects of friendship. Believe me, I could do without some of the drama too, but it’s truly the little things that I am trying to focus on and remember, like this thoughtful party.
