Urban Dictionary, where have you been all my life???

I just spent a good hour looking up random words and laughing to myself. Sometimes, I’ll go to my HAHAHA pinterest board and just laugh and laugh. This one gets me every time.

Do you know what the definition of tailgating is? Drinking lots of beer or makin’ food in the parking lot before a sports or other large event, (usually football or a concert.)

I would probably eat all the food and skip the sports event, thankyouverymuch. Sports are not my favorite….except maybe hockey. But that’s only because I used to work for the Ottawa Senators back in the day. Go Sens go!

Side note: after games, I used to ride up and down the elevators with some of the players of the team and tell them how well they played. This also happened when I worked at Starbucks a few years later. Lots of the players would stop by and get a coffee before their morning practices. I’d chit chat it up.

Craigo’s was a pizza place in Rexburg, Idaho. The only non-restaurant-chain pizza place in town. With *the best* and I really do mean the best breadsticks. Cheesy, yeasty, salty, garlicy breadsticks.

Well, we are gaining ground this summer. I am taking the reins and finding my way around the city juuuuust fine thanks to google and google maps. Every week, we try to explore one or two parts of NYC that we haven’t visited yet or think would be really fun. (Our bucket list is right here if you’d like to see!) It’s turned out to be a great method for us. Laundry and house cleaning is at the beginning of the week. The nanny comes mid-week and our trips fall closer to the end of the week when we need a little pick me up, just before Daddy comes home for the weekend.

Traveling to new places is really fun, but it wreaks havoc on our dinner routine. Being out and about has its perks but trying to nourish 3 kids and myself and my husband who is here and then not here and then here again while we’re doing it is slightly tricky. So, I’ve had to think of dinner recipes that will store well, travel well and please every palate regardless of when we’re eating. Usually when we’re home (and even when we’re not) my kids are never eating at the same time. I know I’m usually the one eating LAST because my kids need drinks, napkins, seconds, food not touching other food on their plates, more drinks, their shirt put back on (??) and more. Plus, my husband currently works crazy hours in a city three hours away so when he’s home, we know he wants everything homemade….hence the storing well part of these new dinner recipes.

So, I’ve talked about this before and I think it’s worth mentioning again: I ONLY WATCH SPORTING EVENTS IF THERE WILL BE FOOD.

Food is the only reason I will:

watch the super bowl
go see a baseball game
get lured into watching basketball
try to play tennis, golf or anything that involves a ball
Did I ever tell you about the time my grandpa took me golfing and after one hole he was like “Yeah, this isn’t the sport for you. Go drive the cart.”

So that’s fun.

When a craving hits you at 10pm at night, you just gotta go for it sometimes.

Now that my husband has been gone for a solid two months, I can safely say that I stay up late at night and worry…and then crave foods.

I worry about everything and then crave everything.

It’s typically very manageable because I don’t ever have the items on hand to make what I’m craving. But the other night when this Mama wanted nachos, she opened up her laptop, navigated over to ClickList and made all her nacho dreams come true.

Incase you’re wondering, ClickList is an online grocery ordering service through Fred Meyer (a Kroger store) and it is glorious. Basically, I order groceries from my bed late at night and then I go pick them up the next morning. Read: I don’t have to get out of the car! They bring all my groceries to me and they load them up.

My cold rages on.

My immune system left my body weeks ago and went on vacation or something. Things are not within homeostasis levels in really any part of my life. I got a cold then just as I was getting over that one, I was hit with another! Jerky germs. GET OUT OF MY BODY!!

My boys caught something too and it is not pretty. I think they have minor versions of what I have. (Thankfully its not the full-blown version!)

Since I seem to have this illness the worst and I’m the Mom and in charge of three little people and there is no Dad around to help, I haven’t been the normal ray of sunshine that I usually am. Shocking!

So, what is my answer to this problem and the rest of life’s problems? CARBS! (And Diet Coke.)

I’m not much of a stress eater, but I’ve been known to eat large quantities of anything when I’m not feeling well, emotionally or physically…or pregnant, but that’s another story.

So, I made a version of my Mom’s biscuit recipe the other day in hopes it would make me feel better and I fell in love all over again.

I’m becoming a little obsessed with this song. Tori Kelly’s voice is amazing. When I was younger, I thought “I could be a famous singer…and go on Oprah!” My sweet mom was like “Oh yeah? Ok!”

She did not crush the dream for the 3 1/2 days I had it.

I had this unwavering confidence that I could become whatever I wanted. I still sort of think that way, but have become more of a realist with age.

I stay in key when I sing and can hold my own in a choir, but will never be Tori Kelly, nor do I want to be. Realist.

My kids are trying to kill me.

I’m pretty sure we’ve discussed this before. But this time I really mean it!

In the last five days, I’ve gotten 19 hours of interrupted sleep total. Maaayyyyybe 20 if I round up. Because I’m paranoid and keep track of my sleep, I know this is an unfortunately low, yet accurate number.
F word.

You’d think by now my two older ones SHOULD know how to sleep through the night. They SHOULD know how to use the bathroom. They SHOULD be able to go back to sleep on their own. But does any of this register with them at 2am, 3am AND 4am? No.

I thought I had brainwashed them enough to know to call out for DAD up in the night, not MOM.

But alas. A Mom makes the bad dreams go away at 2am, takes the toddler to the bathroom at 3am, feeds the baby at 4am and then is up packing school lunches a few hours after that.

I am a Mom. A very very tired Mom who rarely sleeps longer than 3 hours at a time. And I happen to make my family’s world go round with my 10 minute Texas Toast recipe, my semi-clean house, my IV drip of Diet Coke and the large bags under my eyes.

Have you guys seen the previews for the movie called the Shallows?

It’s about a girl who gets attacked by a shark and then stuck on a rock.

I saw this preview 4 times over the course of 1 1/2 days and peed my pants just about every time.

And that was just the previews.

I’m a jumpy person and totally ok with it. I also hate sharks. And spiders and snakes. But especially those sharks. Scary movies? Not my thing.

Have I ever mentioned that I go to the movies for the {obnoxiously overpriced} snacks and NOT the movie? I don’t remember the name of the last movie Gordon and I saw, but I do remember we got a medium popcorn with extra butter and a diet coke 🙂

Going through my archives, I never realized I’ve never posted a recipe for chicken wings!


So, I’m not quite sure what came over me and why I wanted to eat chicken wings so so badly the other day, but that’s the reality of my life. I’ve stopped asking questions and just go with the flow…most of the time.

Also in the reality of my life is no time for anything. Between the move, the half packed house, the baby who “power naps” for 10 minutes every four hours and the now 3 year old who is always asking “why” and adding “what the heck” to every sentence, YEAH. The crockpot is my friend.

Did you know you can cook just about anything in there? Cake? Soup? A whole chicken? It’s true!

So, once upon my chicken wing craving, I pulled out my crockpot and not the deep fryer because {1} Ew. I hate the smell that lingers in my house from deep frying. But more importantly, {2} my thighs don’t need any help getting larger. Also: {3} set it and forget it.

There are not many things I love much more than melty cheese. Wellllll, maybe carbs? And, like, lemon cheesecake?! Fortunately, or possibly unfortunately, my kids are the same way.

THAT IS WHY…I introduced to them the beloved cheese fondue a few weeks ago. Not because it involves a vat of obey gooey cheese, but because I knew it would be a fabulous way to get veggies and protein into my kids. If there is cheese involved, they are all about it. Plus, it’s actually relatively stress free to make. Takes a little prep work, but generally quite simple. Use what veggies, breads and meats you have on hand and dip away 🙂

I don’t have the recipe posted below, but for this fondue I used THIS recipe. It’s one of the very first recipes I ever posted to my blog. I posted it when Brooke was barely 1 year old and Blake and Ed were just a twinkle in my eye {is that the saying?}….or something like that.

I wavered from that posted recipe slightly, using grated fontina, white cheddar and mozzarella. I also used 1/4 cup white wine in place of 1/4 cup of the milk. It’s the melty mozzarella that makes this fondue so stringy {and dreamy!}

My kids thought it was hilarious, especially Blake, and loved to see how far we could stretch the cheese!

I’ve said it before and I’ll say it again, I attend Super Bowl parties for the food, not the football. I know there are football fans out there in the interwebs that read my blog {hello, friends!} that would be considered experts compared to my sports ‘expertise’ but I’ve got the food part covered.

With the Super Bowl this weekend, I thought I would throw together a speedy appetizer that would blow your minds! Cream cheese logs are all the rage you guys…at least in my opinion. And I’ve been seeing them pop up on Pinterest all the time?! Not quite sure what that is about. Conspiracy? Sure.
