I just spent a good hour looking up random words and laughing to myself. Sometimes, I’ll go to my HAHAHA pinterest board and just laugh and laugh. This one gets me every time.

Do you know what the definition of tailgating is? Drinking lots of beer or makin’ food in the parking lot before a sports or other large event, (usually football or a concert).

I would probably eat all the food and skip the sports event, thankyouverymuch. Sports are not my favorite….except maybe hockey. But that’s only because I used to work for the Ottawa Senators back in the day. Go Sens go!

Side note: after games, I used to ride up and down the elevators with some of the players of the team and tell them how well they played. This also happened when I worked at Starbucks a few years later. Lots of the players would stop by and get a coffee before their morning practices. I’d chit chat it up.

“Oh hi, how are you? Going to practice? Gonna beat the Maple Leaves on Thursday? You want a Venti Nonfat Extra Hot Latte? No I didn’t know they’re opening another gym over there. Are you sure you don’t want a pumpkin cream cheese muffin? There’s NO WAY your dog weighs more than 12 pounds. Ok, I’ll marry you!”

One of those players happened to be Mike Fisher. He’s a tallllllllll drink of water, lemmetellyou. Since high school I have quite enjoyed him.

Well, he ended up getting traded……..and also ended up marrying Carrie Underwood.

So, considering I’m basically good friends with Mike, I am by default besties with Carrie.

Aaaaaand, that’s the story of how Carrie Underwood and I are related. You’re welcome.

What does any of this have to do with anything?

Well, let’s start back where this all began with the tailgating thing. I usually don’t tailgate because that means sports are involved. BUT, in rare cases, I totally am down with that kind of stuff. SOOOO, here’s a fabulous sports/tailgating/all around yummy appetizer that you’re gonna love!  Carolina BBQ Pulled Pork Frito Bites. Crunchy, tangy, sweet-with-a-little-heat Frito bites! My husband and I have a new found love for pulled pork and this new mustardy, vinegary Carolina BBQ sauce. It pairs really well together and really isn’t very difficult to make at all. Here’s how you do it:

I started my pork shoulder cooking at 11 pm in a crockpot on my counter. {I was delirious and didn’t take a picture of that…oops.} I got my pork shoulder {or sometimes known as pork butt} at Fred Meyer, which is a Kroger affiliate store, a few days ago on sale. Holla! Can I just say that waking up in the morning to the smell of meat cooking is something I could get used to. Is that weird?

Don’t answer that.

Anyways.

After your meat is super fork tender, you can make the Carolina BBQ sauce. If you’ve never had a Carolina-style BBQ sauce, think yellow mustard jacked up with a bunch of yummy ingredients, such as but not limited to: brown sugar, smoked paprika, vinegar, salt, pepper, Worcestershire sauce, molasses, etc.. I just dumped them into my pot, gave it a good stir and cooked it for a few minutes. THAT’S ALL I DID. Really simple. Also, the color of this stuff is INSANE! My husband literally told me to tell you it’s “liquid gold”. Tasty stuff.

BBQ Pulled Pork

Especially tasty when tossed with uber tender, buttery pulled pork. Once you add about half your bbq sauce to the meat, scoop 1 tablespoon or so into your Fritos scoops and drizzle over more sauce. Because I said so.

Top with a little bit of cilantro and that’s it! Super cute yet delicious appetizer, perfectly suited for any tailgating party.

Carolina BBQ Pulled Pork Frito Bites

Carolina BBQ Pulled Pork Frito Bites are crunchy, tangy, sweet-with-a-little-heat, pork-tastic Frito bites! Carolina sauce never paired so well with pulled pork. It's a perfect tailgating recipe!

Ingredients

for the pork-

  • 3 lb pork shoulder roast
  • 1/2 onion chopped roughly
  • 2 cups beef broth
  • 2 cloves garlic smashed
  • salt & pepper to taste

for the carolina bbq sauce-

Instructions

  • Place all ingredients for the pork into a crockpot. Place the lid on and cook on high for 4 hours or until pork shreds easily with fork. Remove pork from crockpot and shred, discarding fat as you go.
  • To make the carolina bbq sauce, place all ingredients into a saucepan and heat over medium, stirring as you go. Cook for 10 minutes and remove from heat. Pour half into the shredded pork and toss to coat.
  • To assemble the Frito bites, place about 1 tablespoon of pork into each Frito scoop. Drizzle with more bbq sauce and top with cilantro. Serve immediately.

    I just made this today, and it is delicious! Instead of putting it onto the Fritos though, I just dished out a portion of the meat and scooped it onto the chips as I ate. Definitely will be making this again!

    Nothing weird about waking up to the smell of meat. That sounds like the best alarm clock in the world. I loooooove that these are in scoops. So cute! I’m pinning to my tailgating board and following your funnies board. I use these funny boards as an escape on the worst days. So great!

    Looks yummy!

    However, not ALL Carolina BBQ sauce is mustard based. In the western part of the state it can be, but eastern Carolina BBQ is only vinegar based.
