Buffalo Bacon Blue Cheese Guacamole from Lauren's LatestLately I’ve been obsessing over a few things. And by obsessing, I mean doing/eating the following everyday for the past 7ish days or so:

-listening to the 90’s pop radio on Pandora. Yes, I’m still a 15 year old girl. And yes my 3 year old likes N’Sync. Why do you ask?
-eating chocolate covered strawberries. Because they are good. And I never seem to get sick of them.
-sweeping my floor. Because I hate ants in my house. See this post if you don’t know what I’m talking about.
-eating ruby red grapefruits. Because I can’t get over how sweet they taste these days! Citrus is the bomb.
-stalking old high school acquaintances. Just to see if the jerks are wasting their lives a way…which they are. Haha suckers!
-dreaming of Burger King Junior Whoppers. Because I’m pregnant and always magically crave a burger everytime I get in my car.
-also, dreaming of all sorts of other crap too. Because I’m a crazy lady growing a child which basically means hormones are running rampant through my body.
-obsessing over what NOT will be done once this bouncing baby makes his debut. I’m convinced the answer to that is nothing. Although it could perhaps have something to do with those lovely hormones setting up shop and having a little part-ay in my blood stream.
-craving butter lettuce. No other kind of lettuce is allowed in my fridge at this point in time. #butterlettuceforpresident
-shoving avocados into my face. Any way I can get them. They are tasty little suckers. And I bought 8200 at Costco. Soooooo, yeah.

Speaking of avocados, I made you something evil with them. And delicious. And easy. And creamy. And garlicky. And smokey. Because the super bowl is just around the corner…or so I hear. And because I’m a guacamole lover not a hater. This recipe is my go-to guacamole recipe but on crack.

Not THAT kind of crack. Oh you guys.

Buffalo Blue Cheese Guacamole with BaconI added bacon, blue cheese and hot sauce to this version and created something ri-donk-ulous. People *will* go crazy for this guac because it’s different than regular guacamole but just as addicting. I fed this to company and here’s how that went down:

me: “I made weird guacamole…”

visitors try weird guacamole

visitor: “this is pretty good.”

visitors take another bite of weird guacamole

visitor: “this is REALLY good!”

Buffalo Bacon Blue Cheese GuacamolePerfect for big fatty superbowl parties, afternoon snacks or holidays. Once my Buffalo Bacon Blue Cheese Guacamole was all whipped up, I spooned it into a serving bowl and topped it with more blue cheese and hot sauce. So so good! And it looks pretty fancy all dolled up if I do say so myself.

Buffalo Bacon Blue Cheese Guacamole

Guacamole on crack....in the best way possible. Perfect for the Super Bowl, ya'll!

Yield: 4-6 servings

  • 4 slices hickory smoked bacon
  • 2 avocados {I used California Avocados}
  • 1/2 lime, juiced
  • 1/2 large garlic clove grated
  • salt & pepper, to taste
  • 2 tablespoons cilantro, chopped
  • 1/4 cup diced tomato
  • 2 1/2 tablespoons crumbled blue cheese + more for garnish
  • hot sauce, to taste


  1. Start by cooking bacon in skillet until edges are crispy. Transfer to paper towel lined plate. Chop into bite sized pieces and set aside.
  2. Cut open avocados and scoop into large bowl. Mash together with lime juice, garlic, salt and pepper until chunky. Stir in cilantro, tomato, blue cheese, bacon and hot sauce. Stir until combined. Spoon into serving bowl and top with more blue cheese, hot sauce and cilantro. Serve as desired.
  3. *Refrigerate until service plus any leftovers.

  8. This looks absolutely amazing! Great combination of flavors! I have always been a lover of the avocado…I even made up a song about them in my teens. I was a lonely child 🙂 I still hum the song to myself whenever I eat them, which is not often since I somehow became allergic to anything with a stone/pit in it when I turned 30….the allergist says it was a hormonal thing. Such a cruel twist of fate, a lifetime of all my favorite fruits denied just when I was ready to begin my culinary adventures. Boo! I am able to eat them in very small amounts and slowly….I just need to watch for allergy symptoms. I will make this for the super bowl party, and live vicariously through others!

  12. This looks yummy, but I have one word of caution for you. This is listed on your site under the Gluten Free section, but blue cheese (including gorgonzola) is not actually gluten free because the bacteria cultures that produce the blue veins in it are actually started and feed with flour and bread. It’s advised by various Celiac and Gluten Intolerance groups that people who need to be gluten free not eat it. That said, it those folks could easily substitute another cheese, like feta, and enjoy this!
