Whole Wheat Banana Oat Muffins
Did I mention to you guys that I started this healthy challenge contest? Well, I did! One of my friends got a pool of ladies together and we started this whole thing on Sunday. Here’s basically how it works: we have rules to follow. If we follow them daily, then we get points for certain things. If you have the most points at the end, you win the pool of money. {Yup, we pooled our money for more motivation…because sometimes sheer will power is not enough!} I’m not gonna lie, this no candy thing is sort of killing me! Oh, and not eating after 8 pm. And all the water. Ok, it’s all pretty tough. And, I thought I was healthy to begin with! Pshh! Guess not.So, this recipe is going out to all the ladies doing the Healthy Challenge, and of course all my faithful readers! Just omit the chocolate chips and it becomes the perfect healthy and wholesome breakfast! Made with oats, milk, whole wheat flour and brown sugar. High in fiber, low in fat! So good your kids will eat ‘em and not have the slightest clue they are healthy! My daughter had two over the course of the morning and then asked for one for snack….although that muffin got all the chocolate chips picked out of it. Oh well!
In other news, I got a necklace and 10 red roses delivered to me recently. Basically, my husband is the sweetest man on the face of the planet. He knew I would be missing him, so he ordered me an early Mother’s Day gift {the necklace} and just for good measure some long stem red roses…1 for each week he’s away. What a stud. I love {and miss} that guy!

Whole Wheat Banana Oat Muffins

Ingredients:
1/2 cup oats
1/2 cup milk
1/4 cup butter, melted
1/3 cup packed brown sugar
1 large banana, mashed
1 egg
1 teaspoon vanilla extract
2/3 cup self-rising flour
1/2 cup whole wheat flour
1/4 cup chocolate chips {optional}
Directions:
Preheat oven to 350 degrees. Line 12 muffin tins with paper liners and set aside.
In a small bowl, soak oats in milk and set aside. In a larger bowl, stir butter, sugar, banana, egg and vanilla together. Stir in flours until well incorporated. Slowly stir in oats, milk and chocolate chips until uniform in texture. Drop by the tablespoon into prepared pan. Bake 15 minutes or so until toothpick comes out clean when inserted.
Serve warm.
*These muffins also would freeze well!
