Man oh man are you guys going to LOVE me!! These waffles are my new favorite thing….so yummy, super easy, amazingly delicious and uber healthy!! BINGO! It’s win-win…..win…..win?!  I know a lot of you were practically shouting on Facebook that you wanted breakfast ideas, so here is one you’re going to want to print, frame and use over and over again: Whole Wheat Banana Bread Waffles. Perfect for the weekend or even a weekday! They don’t take much longer to make than bacon and eggs and are ideal for the little mouths I know you’ve gotta feed.

Excuse me while I go into mommy mode for a second:

I find a freakish amount of joy in my family eating healthy food that doesn’t taste healthy. This recipe is trickery at it’s best. These waffles certainly do not taste healthy, but they totally are thanks to skim milk, mashed banana, walnuts and white whole wheat flour. No, I’m not being racist. Yes there is such a thing. Basically white whole wheat flour is the albino version of whole wheat flour. All the same health benefits apply, except it’s lighter in color. {*especially helpful when you have older kids that base their eating decisions solely on what the food looks like!} I saw it at the store and thought I’d give it a whirl. #bestideaever. I’m pretty hyped about this new flour….so expect to see healthier recipes coming up next week.

Needless to say, these were a huge success! Oh, and I love waffles. 🙂

Also, I’m weird.

But I think you knew that.

Here’s how you make ’em:

Start by measuring your dry ingredients into a bowl–

Whisk together to combine and then make a well in the middle of this bowl. Waffle making is fun!

Next thing to do is to separate an egg into a small bowl. I separate my eggs by dropping one into my hand and let gravity take care of the rest. I don’t mess with the shells. I originally started separating my eggs using the shell nature built around it, but I’ve poked a few too many yolks. Broken shells are sharp little devils. So, now I do it the grody way.

Drop the egg yolk into a cup of milk you already measured and then for the love of pete go wash your hands!

Mix the milk and the yolk together and pour into that well in the dry ingredients.

Pour in your oil,

and vanilla.

Now, brace yourselves. Things are gonna get wild. Here comes the banana! Find a really ripe one hanging out on top of your microwave and mash it up. And by ripe I mean mostly black. Or yellow with A LOT of black spots. The darker it is, the sweeter it is. This is common knowledge, yes?

Once your banana is mashed, pour that into the mix too.

Stir this whole bowl of ingredients up and set it aside. {PS- I love my hot pink spatula from OXO!}

I like banana bread with nuts, so it’s no surprise I’m adding some into my banana bread waffles too. Chop ’em up and add ’em in.

My daughter ‘sprinkled’ these into the bowl…..and somehow managed to get most of the walnuts not into the bowl. That was awesome.

Remember that lonely egg white? Well it’s time has come to be turned into meringue. Ahh, the circle of life. {Did Elton John just start singing in your head too?}

Fold all the whipped egg whites into the batter….

…until most of the lumps are incorporated in. A few small lumps are a.o.k!

Now pour a heaping 1/3 cup full of batter onto your hot and greased waffle iron.

Shut the lid and let it do it’s thang. This is after about 20 seconds. That baking powder works like a charm! See how the waffle is puffing up and pushing the waffle iron apart? That is a good sign!

Once that green light goes off…or on {depending on what your waffle iron is like} your waffle is done! Woo hoo! You just made waffles! Wasn’t that easy?

You must eat these warm with a bunch of fresh banana slices and walnuts. I loved the double banana-nut thing.

Whole Wheat Banana Bread Waffles

Ingredients

  • 1 cup skim milk
  • 1 egg separated
  • 1/2 teaspoon vanilla
  • 3 tablespoons canola oil or melted butter
  • 1 very ripe banana mashed
  • 1 1/4 cups white whole wheat flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup chopped walnuts
  • walnuts optional
  • bananas optional
  • maple syrup optional

Instructions

  • In large bowl, whisk together all dry ingredients. Make a well in the center and pour in milk, egg yolk, vanilla, oil and mashed banana. Stir together until just combined.
  • Whip egg white until stiff peaks form. Gently fold whites into batter. Stir in walnuts.
  • Pour a heaping 1/3 cup into hot, greased waffle maker and cook to your preference. Serve with fresh banana slices, more walnuts and maple syrup.

    I have the same waffle maker…and i make waffles every sunday…but my waffles came out undercooked and chewy… any tips? They tasted amazing though =)

      Try putting less into the waffle maker and cooking it longer so it becomes more crispy and brown. If those things don’t work, try reducing the amount of oil.

    Made these for dinner last night and was surprised that they sort of stuck to my waffle iron a bit and never got crisp. I have never had that happen with any waffle I have made before but thought it might have to do with the banana. They tasted really good…I loved the walnuts, but just never got crisp.

      I used non stick cooking spray on my iron and cooked them longer to get a little crispier. Next time, omit the oil–that should help with the crispiness.

    My brothers would probably be all for the white whole wheat flour but is it acceptable to use plain (but loveable) whole wheat flour? Or should I sub in some all purpose flour to “whiten” it up?

    These look delish! Just made whole wheat banana bread pancakes last weekend with regular whole wheat flour and I seriously loved them. But the “white” whole wheat flour is definitely an excellent thing to use with kids 🙂
