Swiss Steak

I know it’s Christmas Eve and all, but I needed to post this recipe for you all to make between Christmas and New Years!

This Swiss Steak is a meal that my Mom used to make when I was growing up. It’s stick to your ribs delicious and so darn easy too! And everyone loves it! I like to serve mine over mashed potatoes, however, it’s pretty tasty on its own. All you do is saute some onions and garlic in olive oil and then brown your meat. Then add in lots of tomato sauce, V8 and seasoning and simmer away! About an hour before you want to serve this, add in your carrots. Right before you’re ready to sit down and eat, stir in the frozen peas and voila! Dinner is served!

Ingredients:
3 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
2 lbs. stew meat
1 tablespoon ground thyme
lots of salt & pepper
36 oz. V8 vegetable juice (3 cans)
2 cans tomato sauce
1 teaspoon sugar
1 1/2 lbs. carrots, peeled and sliced into coins
1 1/2 cups frozen peas

Directions:
In a large pot, saute onions and garlic in olive oil for 3 minutes or so over medium heat. Sprinkle plenty of salt and pepper over meat and stir into the hot pot. Brown thoroughly and stir in V8, tomato sauce, more salt & pepper, thyme and sugar. Bring to a boil and reduce heat to simmer. Cook covered 2 hours or until meat is tender. Stir in carrots and cook another 45 minutes or until fork tender. Before servings stir in peas. Taste and adjust seasonings. Lots of salt, pepper and possibly more sugar depending on your taste. Serve hot over mashed potatoes.

    You didn’t say what size cans of tomato sauce.
