Strawberry Rice Krispie Treats

Strawberry Rice Krispie Cakes for Valentine's Day from www.laurenslatest.comDid I ever tell you about the time I ate an entire box of rice krispie treats in 1 day? Actually it was one afternoon….in college. I love love love rice krispie treats and cannot say no to them. This was probably around the time I ate an entire Better than Sex cake in an evening. Yeah. I let loose in college. They weren’t dares or contests either. I just couldn’t say no and happened to like sugar. And let me be clear that these are the only two times I ever did something like this {that I recall}.

I also became BFF’s with Sonic Corndogs….and quite possibly their Cherry Limeade too.

But after my freshman year, I got my act together I swear!! I went to Sonic only sometimes and lost the 15+ pounds…and never bought a box of rice krispie treats again. The only time I allow myself to indulge is when I make them at home. I really don’t make them that often {for obvious reasons} so I don’t feel guilty having a few when I do.

Well the other day when the marshmallow gods were smiling down on my kitchen and I happened to have all the ingredients on hand for a batch, I decided to change things up and do a little mixology. Yes friends, mixology IS a word. And, yes, I made mini strawberry flavored cakes out of plain old rice krispie treats! 🙂 Perfectly sweet and pink for Valentine’s Day! Makes a great activity for kids and are whipped together in no time at all! No baking required! YES. Here’s how you make them:

IMG_0003Start by melting some mini marshmallows together with some butter.

IMG_0007You want it completely smooth like so!

IMG_0009Now comes the secret ingredient! Can any of you guess what this is? Strawberry Nesquik!! Ya. This is the powder you mix with milk to make strawberry milk….except we’re adding it to marshmallows!!

IMG_0012After a few stirs, the powder will dissolve and you’ll have this super pink sticky mixture.

IMG_0018Remove it from the heat and stir in the rice krispies.

IMG_0019Now, divide these between 12 well greased mini cheesecake pans {or muffin tins} and cool.

chocolateWhile those are doing there thing, measure out some white chocolate chips and melt them down in the microwave slowly. White chocolate can be really temperamental in the microwave, so keep a close eye on it and stir frequently.

Strawberry Rice Krispie Treats

Strawberry Rice Krispie Treats are a fun way to dress up plain ol' rice krispie treats, especially great for Valentine's Day!

Cook Time 5 minutes
Total Time 35 minutes

Ingredients

  • 1 tablespoon butter
  • 3 cups mini marshmallows
  • 2 tablespoons Strawberry Quik
  • 4 cups rice krispie cereal
  • 1/2 cup white chocolate chips
  • valentine sprinkles

Instructions

  • Spray a mini cheesecake pan with nonstick cooking spray and set aside. {Will make 12.}
  • In a large pot, melt butter over medium heat. Stir in marshmallows and reduce temperature to medium low until melted and completely smooth.
  • Stir in strawberry Quik. Remove from heat and stir in cereal.
  • Press into prepared pan and cool to room temperature. Melt white chocolate chips until smooth. Remove cakes from pan once cooled. Drizzle tops with white chocolate and top with sprinkles. Serve.
