Pomegranate White Chocolate Sugar Cookies

Good Wednesday morning! If you haven’t noticed, things have gotten all prettified up in here. I’ve been working away with Lindsay trying to get this redesign finished and finally it is 🙂 I’m still working on transferring some pictures and recipes over to this new formatting, so please bear with me while that happens, but everything else is lookin’ purdy! Hopefully you’ll all be able to navigate this new site easier than how it was before.

Today, I get to share with you some of the tastiest and festive cookies! Who doesn’t love a good sugar cookie? NO ONE. Who doesn’t love a sugar cookie with a few little goodies mixed in? NO ONE. I think the holidays scream for cookies. Everyone is making them this time of year because they’re easy, fast and delicious. These babies are no exception. Sweet, chewy little cute cookies that you can make for teachers, loved ones or keep all to yourself…I won’t tell. {I have a 3 year old who wants to eat everything I eat….I’m a food hoarding fool. Not even kidding.}

Here’s how you make them:

Start by getting some butter out of the fridge and bringing it to room temperature. I used Land O’Lakes salted butter.

To make your butter warm up faster, cut into smaller pieces.

Ok, now that you have soft butter, whip it together with some sugar until light and fluffy.

Stir in an egg

and some vanilla.

Be sure to scrape the bottom and whip again so everything comes together evenly.

Then you’ll dump in all your dry ingredients and stir. At this point you’ll hit yourself because you forgot to take a picture of that step. And then you’ll remind yourself that you’re pregnant and you should probably sit down and have some lemonade. And then you’ll watch an episode or two of Married to Jonas. And them you’ll remember you have cookie dough to tend to. Then you’ll add in some pomegranate arils and wish you weren’t pregnant so you could eat cookie dough. {Not speaking from experience or anything.}

Scoop that cookie dough out into some baking sheets and throw into a preheated oven.

A few magical minutes later, you have some mighty tasty cookies. You could stop here, but I wanted these to look a little bit cuter.

So I melted down a bunch of white chocolate….

And drizzled the heck out of it over these guys. You could wait for these to dry completely, but you and I both know that that never happens. So I ate about 17 of these with copious amounts of chocolate. {I’m talking almost illegal levels, people.} And my fetus rejoiced and kicked my bladder the rest of the afternoon…bless his heart.

Pomegranate White Chocolate Cookies

These are sweet, chewy White Chocolate Cookies with pomegranate arils mixed in. Make these for teachers, loved ones or keep all to yourself.

  • Preheat oven to 350 degrees F.
  • Bring butter to room temperature. I used Land O’Lakes salted butter. To make your butter warm up faster, cut into smaller pieces.
  • Whip together butter and sugar until light and fluffy.
  • Stir in an egg and vanilla.
  • Be sure to scrape the bottom and whip again so everything comes together evenly.
  • Add in dry ingredients and stir.
  • Add pomegranate arils.
  • Scoop cookie dough onto baking sheets and put into preheated oven for 10-12 minutes.
  • While cookies bake, melt white chocolate in microwave or in broiler. Drizzle it over cookies.

    How do you get the seeds out of the pomegrant things? I love the flavor of them but the seeds hurt my teeth. Is there a way to get them out or do most people just eat them seed and all?

    Haha, my roommate eats pats of butter out of the fridge. And she’s like a size 0, I don’t get it!!!!

    Regardless, I would totally eat 3 of these cookies and not mind one bit if it sent me up a pant size. They look glorious!

    OMG, when I was little I used to spread butter (thick!) on crackers and when the house was dry my mom would make her “speciality” of butter and brown sugar sandwiches for my school lunch. I have 1 pomegranate in my fridge….about to be put to good use!

    Mmmm… I LOVE baking with Pomegranates – – they add such a pop of colour, and once all toasty they have this nutty flavour. Meshed with white chocolate, I can safely say – I think this is a keeper 😉
