Pomegranate Salsa

By the time you all are reading this, I’ll be on my way to New York City! Yikes! Incase you are wondering what that is about, see the below post. 🙂 It has a little something to do with THIS recipe and Good Morning America!

Now, I’ve been pretty busy these last few days with travel arrangements and all, but I had to post this recipe because it’s delicious, festive and would be perfect for all those holiday parties I know you have coming up! It takes just minutes to make and it’s completely red and green! Perfect for Christmas time. And, you know everyone is going to want to make desserts because “it’s the holidays!” but this is a nice healthy recipe to keep that scale from creeping upwards. This salsa is sweet from the pomegranate arils, spicy from the jalapenos, tangy from the lime juice, and just downright yummy with everything else!

When I first made this, I was worried that the crunch from the seed inside the aril would be annoying in a salsa, but when you eat them with tortilla chips, you don’t even notice them at all! The bigger crunch from the chip takes away from the smaller crunch from the seed. It just worked out perfectly and everyone who had this loved it.

Of course, feel free to make this your own! If you like things spicier, add more jalapenos. If you like it more sweet, add more sugar and arils. My recipe should just be a starting point for you to go venture out into the culinary world to come up with your own salsa recipe that you and your family love! This is the recipe how we like it in our house!

Pomegranate Salsa

Pomegranate Salsa is sweet from the pomegranate arils, spicy from the jalapenos, tangy from the lime juice, and just downright yummy!

Ingredients

  • 3 medium on the vine tomatoes diced
  • 1 cup pomegranate arils
  • 1/2 cup cilantro chopped
  • 2 green onions chopped
  • 1 jalapeno finely diced - seeds and ribs removed
  • 1 lime juiced
  • 1 teaspoon sugar
  • salt & pepper to taste

Instructions

  • Mix all ingredients together in a large bowl. Taste and adjust seasonings. Serve with tortilla chips.
