Why You’ll Love This Recipe

Everyone in our household loves peanut butter and chocolate together. Nothing seems to beat it. It always fills our cravings whether it be a peanut butter cup, peanut butter M&M’s, or chocolate chips and peanut butter on a spoon (when we’re really in a pinch). Are you all addicted to PB & chocolate as much as we are? I wouldn’t blame you if you were! 🙂

I’m pretty sure this Peanut Butter Brownie Pie could fall under the life-changing category. It’s fudgy and soft from the brownie and then creamy and smooth with the peanut butter mousse on top. Yup. Peanut butter mousse. And then, if that wasn’t enough, I top the whole thing with chocolate sauce and salted peanuts. Ridiculous, right?

Do I Have to use a Boxed Brownie Mix?

No, you can either use a brownie mix for this recipe or make brownies from scratch! Do what is easier for you. For this recipe, I used a boxed brownie mix because it was easier and I had one on hand. But I must say my fudge brownie recipe is pretty dang good if you want to go that route. Either way, this recipe will come out delicious!

Variation – Make these into Brownie Bars!

Don’t have a round springform pan? Make these into bars by using a square springform pan. You can also just use a square 9×9 baking dish for thicker brownies, or a 9×13 pan for thinner brownies. I’ve done it both with a round springform and cut into “pie” shapes, but I’ve also used a square pan and made bars. Either way, I’m still calling it PIE! 🙂

Prep

Preheat the oven. Lightly grease a 9 or 10-inch springform pan and set it aside.

Make Brownie Batter + Bake

In a large bowl, mix brownie batter according to package directions if using boxed or from scratch brownie recipe.

Pour into a prepared pan and bake until set. (Look on the back of the box for the time it takes to bake a 9×9 square pan of brownies. That’s a good time to start off with and then go from there.)

Remove brownies from the oven and cool completely.

Pro Tip: If you’re not using a springform pan, I would recommend removing the brownies from the pan before frosting, cutting and decorating.

Next, Make the Peanut Butter Mousse

In a stand mixer, whip heavy cream with vanilla and cornstarch until firm peaks form. Scrape the whipped cream into a smaller bowl and set it aside.

In the same stand mixer bowl (no need to wash!), whip cream cheese and peanut butter together until combined. Stir in powdered sugar and vanilla. Scrape sides and whip again. Carefully fold in whipped cream.

Scoop peanut butter mixture onto cooked brownie and smooth the top. Refrigerate until set, at least 2 hours.

Serve!

When you are ready to serve, remove the sides of the springform pan. Cut into pieces and drizzle with chocolate sauce and salted peanuts.

Storing Peanut Butter Brownie Pie Directions

Store any leftovers in an airtight container, in the fridge for up to 5 days!

Can I make this ahead of time?

Yes! Since it needs time in the fridge to set anyway, this brownie pie is great for making several hours or even the day before you want to serve it.

Can I Freeze it?

Yes! You can freeze leftovers or the entire pie! Make sure to wrap it in plastic wrap really well or place in a freezer safe, airtight container. Peanut Butter Brownie pie will stay fresh in the freezer for about a month.

Oh yum! I’m definitely making this!
By the way, I’m a bit confused, why would you stop stop desserts and start making food with nutritional value? My brain doesn’t compute – all it knows is sugar = good, no sugar = bad!
