That Good Salad

That Good Salad

Hey everyone! Gord and I are still enjoying our mini road trip slash work trip this week. We head back home to our kiddos tomorrow and couldn’t be more excited to see them. They are exhausting little rascals, but boy do they steal your heart.

This salad recipe is something I copied from my Mom’s recipe box about 12 years ago when I was heading to college. I think she got the recipe from a lady from our church?! Maybe. I don’t really remember. BUT–> it’s called “That Good Salad” because that is what everyone says when they try it. I’ve made this a handful of times and can completely attest that that is 100% true. The bowl gets cleaned and people ask me for the recipe.

My kids are trying to kill me.

I’m pretty sure we’ve discussed this before. But this time I really mean it!

In the last five days, I’ve gotten 19 hours of interrupted sleep total. Maaayyyyybe 20 if I round up. Because I’m paranoid and keep track of my sleep, I know this is an unfortunately low, yet accurate number.
F word.

You’d think by now my two older ones SHOULD know how to sleep through the night. They SHOULD know how to use the bathroom. They SHOULD be able to go back to sleep on their own. But does any of this register with them at 2am, 3am AND 4am? No.

I thought I had brainwashed them enough to know to call out for DAD up in the night, not MOM.

But alas. A Mom makes the bad dreams go away at 2am, takes the toddler to the bathroom at 3am, feeds the baby at 4am and then is up packing school lunches a few hours after that.

I am a Mom. A very very tired Mom who rarely sleeps longer than 3 hours at a time. And I happen to make my family’s world go round with my 10 minute Texas Toast recipe, my semi-clean house, my IV drip of Diet Coke and the large bags under my eyes.

Eddie on Solids

Eddie on Solids

This love bug is starting in on solids! I roasted some sweet potatoes and after he got used to the new flavor, he was loving life!! So of course I had the camera out and took some fun video to remember him at this stage and age. I tell ya, if he slept better, I’d be popping these adorable blue-eyed babies out like crazy. But, REALITY CHECK: this boy is still waking up 2 times a night. Mama’s engines don’t run on 6 hours of interrupted sleep very well. So, we’re holding steady with 2 kids and 1 baby. Ha!

Anyways, I know you all love seeing this boy grow, so enjoy this fun video 🙂

I’ll have a new recipe for you on Wednesday.

Hold onto your hats friends, I’ve got another *fat pants* recipe for you, and this one is RIDICULOUS. I’m so so excited to be sharing this recipe with you today because it is so amazingly good!

A sweet cinnamon swirled cake, baked until perfectly moist and then dipped into melted butter and coated with cinnamon and sugar!! If that doesn’t make you excited for dessert, then I don’t know what will.

You have my friend Machel to blame. Last week, she employed me to create a clone to a very very similar item found at her grocery store a few weeks prior. I’m not one to back down from a challenge, so of course I gladly accepted and a few days later here she blows.

This is a pretty simple loaf to make, you just need to be prepared to get a little messy whilst dipping the whole loaf into melted butter…and then cinnamon and sugar.

So, this is a recipe a little out of the ordinary, but I’ve had a few of my friends ask me about this specific recipe, so I thought ‘why not throw it on the blog?’

Back in the day before I was pregnant with Eddie, I was doing a few rounds of the 24-Day Challenge. This helped me reign in my eating habits and actually helped me lose a little weight, and a lot of inches, especially around my waist. Then I got pregnant and had my sweet little Ed and now after 6 months of hard work, I’m just about to where I want to be. Hooray!

I might do another 24-Day Challenge because I know it will work and I know I can do it. It doesn’t take all my carbs away from me and I typically feel amazing once its over. {I feel like I’m about to murder someone after getting a horrible cold this past weekend while in the middle of Whole30.}

But, I digress.

Weight Loss Update

Weight Loss Update

Here we go–back at it again!

I didn’t take very many photos of myself this past month and apparently when I did, it was when I was holding a giant cookie. This isn’t indicative of how this past month went with my weight loss progress, but I will say that Swig sugar cookie was well worth the calories.

So! This month was filled with swim lessons for our kids, not a lot of gym time, my husband finishing up some assignments for his Master’s and a 5 day trip to Utah. It had its ups and downs, and we were {and continue to be} so busy, but that’s ok! Here’s how my weight loss has been going:

I’ve teamed up with Crisco®, as a Crisco Creator, to help inspire home cooks with new recipe ideas and cooking and baking tips using Crisco® products.

Well, howdy friends! It’s been a while since I’ve brought you a dessert recipe, so here lies an amazing one that I hope will be reason enough to stop what you’re doing to make immediately.

This Chocolate Skillet S’mores Cookie is to die for and is so so simple to make. If you have any experience baking cookies, then this recipe will come easy to you. Lots of basic ingredients thrown together to create a crispy edged, soft and chewy skillet cookie that happens to be filled with all the good stuff that makes s’mores so amazing.

I love using Crisco® All-Vegetable Butter Flavored Shortening Sticks for a recipe like this because if you ever run out of butter {which I do all the time} then this is a great alternative that just so happens to have 50% less saturated fat than butter¹. You might be surprised to learn that there are many ways to cook and bake with Crisco® shortening to make savory dishes and sweet desserts. It also delivers higher, lighter-textured, moist and tender baked goods which you can see in this recipe.

Peach Dumplings

Peach Dumplings

I just spent a good portion of the day watching music videos from the late 90’s and early 2000’s. Ohmygosh, it all takes me back.
N*Sync, 98 degrees, Britney Spears, Backstreet Boys, Christina Aguilera, Jessica Simpson, Brandy, the list goes on!! I can’t handle the unfortunate hilarity. Since I grew up with no cable tv, I never got to see these music videos. So deprived was my childhood.

So for some reason, I was entranced into a freshman high school spell that sent me into a 2 1/2 hours 15 minute watching spree of said music videos.

Here are a few observations for you. You’re welcome:

Justin Timberlake is so much cooler now. {Though his chunky turtleneck in this video is pretty RAD.}

The Nick Lachey/Jessica Simpson relationship certainly didn’t last long {3 1/2 years!} despite their amazing reality show. *Please note my sarcastic use of the word amazing in the previous sentence.

The mother in me had a minor heart attack over Britney Spears’ school outfits in this video.

What ever happened to Jojo?

Lauryn Hill has such a pretty voice. Especially in Sister Act II. PS- Jennifer Love Hewitt in this movie is prime.

I don’t care what you say, I will forever love this song.

Ah, memory lane. You were such a good way to blow my otherwise productive evening.
Anyways, I’ve been seeing recipes for these dessert dumplings float around for quite some time now, and I thought it was about time I made my own, without the soda in the bottom. Typically, the recipe calls for a can of mountain dew poured into the bottom to create a lemon-lime sauce in the bottom. I thought that sounded gross, so I made my own. Slightly different, but so delicious. It’s like a weird peach pie stuffed into crescent rolls. Warm, comforting and delicious. Especially delicious with ice cream, though I have yet to find something that ISN’T better with ice cream. But I digress.

So, my Eddie-boy is already 6 months old! Here’s the latest and greatest:

At about 5 1/2 months, we started Eddie on a little rice cereal because he was reaching for any and all food we were eating. Of course he loved it! Since he’s turned 6 months officially, we’ve migrated towards other foods like banana, avocado and squash. LOVES banana, but really struggles to like the avocado and squash. I’m going to roast and puree a little sweet potato later this week to see how he likes that as soon as we get back to Idaho.

But the biggest news of all is probably that this social boy has completely weaned himself off his mama’s milk. I was starting to worry about his lightweight status after he only gained 4 ounces from month 4 to month 5 and then I realized he wasn’t nursing enough/not wanting to nurse because he’d rather be looking out at the world that in at my shirt. So I initially started supplementing with formula to make up the difference, but now even if I offer to nurse, he wants nothing to do with me and refuses. Such a rascal! So my milk shop is out of service. Haha!
