Oreo Bottomed Chocolate Cupcakes with Peanut Butter Oreo Frosting

So I posted a picture of these on Instagram…..HOLYBALLS. You guys get bossy for recipes love cupcakes!

I took the hint from the thousands of you begging asking for the recipe, SO! Here it is. My soup recipe will just have to wait until Monday.

I know I know. I was upset about it too.

I’m not gonna mess around with my random life chit chat and get straight to the point before you find out where I live and come threaten me by gun-point….or whisk-point?! Either is equally dangerous, I’m sure.

Here’s how you make them:

IMG_2185

Start out by grabbing all your ingredients for some chocolate cupcake batter. And now is about the time I explain what is up with my lovely iPhone photos. My 5 year old *insisted* she take my pictures for me since she was my child labor helper for the day. So these have Brooke written all over them. Enjoy.

IMG_2187

For these cupcakes, I used this recipe, but halved it and added a 1/2 teaspoon baking powder to get a little more lift in the batter, but feel free to use a favorite chocolate cake recipe you have…or just get a box mix. Whatevs. My Perfect Chocolate Cake recipe would have been perfect for this. Not quite sure why I didn’t just use that one….I’m an odd duck.

IMG_2188

Once your batter is done, pour it over some paper lined, oreo filled muffin cups.

IMG_0013

And here marks the spot where Brooke got bored with her life/my bad jokes and gave up on this recipe.

It was bound to happen sooner or later.

Once you have all 18 muffin cups filled 3/4 way full, pop into a preheated oven and bake according to whatever recipe you decided to use.

IMG_0018

And just like that, cupcakes!! Pop them onto a cooling rack to cool off faster!

IMG_0062

While those are cooling, grind up some oreos for the frosting. Yes, friends…we’re stirring cookies into our peanut butter frosting.

Let the drooling commence.

IMG_0067

I used a blender to grind these babies up but a food processor or knife and cutting board would work just as well.

IMG_0072

So, for the actual frosting part, place your powdered sugar, butter, peanut butter and vanilla into the bowl of a stand mixer. Stir this together for a minute or two to disperse the butters around. Then drizzle in about 3 tablespoons of milk to get a light and creamy frosting.

IMG_0081

It should look something like this. This is GREAT pb frosting as is, but because I’m me, I take things one step further so…….

IMG_0082

dump in those cookie crumbs!

IMG_0092

Stir these in for a hot second and voila! You’re ready to go. Top each cupcake generously with this peanut butter Oreo frosting.

IMG_0097

Then for the glaze, simply melt a little peanut butter and maple syrup together until smooth.

IMG_0100

Like so! Drizzle this over each frosted cupcake and top with an Oreo.

And just like that, you have amazing peanut buttery cookies and cream cupcakes.

Everything about these is delicious, but my favorite part is absolutely hands down this ridiculous frosting. It is seriously TO.DIE.FOR. Heaven on a cupcake….or spoon 😉

Oreo Chocolate Peanut Butter Cupcakes

Oreo Chocolate Peanut Butter Cupcakes are oreo bottomed chocolate cupcakes with oreo peanut butter frosting!
servings 18 cupcakes
Prep Time 1 hour
Cook Time 20 minutes
Total Time 1 hour 20 minutes

Ingredients

  • Any chocolate cake recipe I halved this one and added in 1/2 teaspoon baking powder
  • 18 Oreo cookies

frosting:

  • 1/2 cup butter softened
  • 1/2 cup smooth peanut butter
  • 1 teaspoon vanilla
  • 3 cups powdered sugar
  • 3 tablespoons milk give or take 1 tablespoon
  • 6 Oreo cookies crushed

peanut butter glaze:

Instructions

  • Line muffin tin with paper liners and drop an Oreo cookie into the bottom of each one. Set aside.
  • Make chocolate cake batter according to package directions. Pour batter over each cookie, filling to 3/4 way full. Bake according to package directions or until toothpick comes out clean after inserted. Set aside to cool.
  • For the frosting, whip butters, vanilla and powdered sugar together, slowly drizzling milk in to moisten. Once all the ingredients have come together into a frosting, whip 2 minutes 'til smooth and fluffy. Stir in oreo crumbs. Spread generously over cooled cupcakes.
  • For the glaze, microwave peanut butter and maple syrup together for 30 seconds or until warmed and thinned out. {You don't want it too hot to melt the frosting.} Drizzle over each cake using a spoon or pour into a squeeze bottle and drizzle. Top with half a cookie and serve.

It doesn’t state the amount of powdered sugar, peanut butter, vanilla or butter for the frosting and I was wondering do you have those measurements?

I’m gearing up for the Macmillan Cancer trust coffee morning and making tons of cakes to sell for charity, do you think I would be able to make the base of these and the topping seperately and freeze them to combine just before the event? (I have an 8 week old baby so anything I can do before the event to limit work on the day is good! thank you!
