No-Knead Crescent Rolls {with Cinnamon Orange Butter}

No Knead Crescent Rolls There comes a time when you just gotta give into the carbs. And by carbs I mean straight up bread. Fresh out of the oven. Slathered in butter. And then a little more butter. Some days that sounds a thousand times better than a brownie.

Yesterday just happened to be one of those days.

And so I made the laziest version of crescent rolls known to man and filled them chock full of everything I live workout for. {Namely: butter.}

These babies require 1 bowl, a wooden spoon and absolutely zero elbow grease. That’s right. No kneading required. Perfect for all you bread making virgins. Or all you burnt out stay at home moms. Not that I’m burnt out or anything. That would be preposterous.

Which brings me to my next point: WHY does laundry never END? It makes me want to swear. I’m good about starting a load and switching it over but after THAT point I’m completely annoyed with it all. There was once an 8 day stretch where we rummaged through our laundry baskets full of CLEAN CLOTHES trying to find an outfit. Oi! I’m so vaclempt.


You need these rolls in your life. With the butter too. They’re lovely sweet little pillows of warm carby heaven that will make your love handles sing. Mine sure did after having 7. Yes, that figure is accurate. ┬áSEVEN.

Moral of the Story: don’t be like me. Do your laundry.

Other Moral of the Story: after you make these you’re going to want to eat seven of them. It’s ok. Just accept it and move on.

Here’s how you make them:

Crescent Rolls 1 In a measuring cup, stir some warm water, honey and yeast together. Basically, you want all that yeast submerged so it can start makin’ it’s delicious bubbles.

Crescent Rolls 2 I used this quick rise yeast. It works wonders! :)

Crescent Rolls 3 So while you’re waiting for the yeast to proof, melt some butter. Once you have that hot melty butter, pour in some cold milk to make it a luke warm mixture–perfect for the yeast.

Crescent Rolls 4 By this time, your yeast should be foaming beautifully! I know this looks kind of odd, but all this foamy stuff means the yeast is working which means your bread will rise and turn into magical pillows of carb-filled air.

Crescent Rolls 5 So at this point we can transfer the yeast mixture and the milk/butter mixture into a big ol’ bowl.

Crescent Rolls 6 Crack in an egg,

Crescent Rolls 7 pour in some sugar,

Crescent Rolls 8 and sprinkle in some salt.

Crescent Rolls 9 Once that is all incorporated, start adding your flour in 1/2 cup increments stirring well after each.

Crescent Rolls 10 You can see the dough slowly coming together at this point but still a little too sticky….so more flour!

Crescent Rolls 11 AH-HA! DOUGH! This is still sticky but has enough flour in it to hold a decent shape and you will notice the sides are starting to look a little cleaner. All good signs.

Crescent Rolls 12 Ok. The hard part is over! Grease your bowl and your dough, cover with plastic wrap and a dish towel and set it aside for an hour or so. You want it to double in size.

Crescent Rolls 13 Hello, dough! My you look and smell lovely! Punch this sucker down and cut into two.

Crescent Rolls 14 Working with one of the halves at a time, flour a board and the dough ball.

Crescent Rolls 15 Roll it out into a 12-14 inch circle. Make sure you keep moving the dough to make sure it doesn’t stick!! Your crescents won’t look much like crescents if you have to use a spatula to remove them off your board. Yikes.

Crescent Rolls 16 So, here comes the fun part. Brush the entire circle with lots of butter and cut into 8 or 9 even pieces. {A pizza cutter works great for this!}

Crescent Rolls 17 Starting at the larger end, roll each piece into a crescent.

Crescent Rolls 18 Place them onto a parchment paper lined baking sheet and brush with more butter! Yes. You heard me. MORE BUTTER.

Crescent Rolls 19 You’ll want to cover the pan lightly with some plastic wrap and let these babies rise another 30 minutes or so–basically until they look like little pillows of love. Bake these off for 12-15 minutes at 350 or until golden brown.

Crescent Rolls 20 In the mean time, make some of this killer butter! Only 4 ingredients go into this…incredible how tasty it is!

Crescent Rolls 21 Drizzle some honey into a bowl with some butter.

Crescent Rolls 22 Add in some cinnamon

Crescent Rolls 23 and grate in some orange zest. YUM!

Crescent Rolls 24 Stir this all together and voila! The best thing ever since sliced bread! Well, ok. Not really. But you get the idea. {And this just so happens to taste amazing on sliced bread.}

Crescent Rolls 25 Ok–back to the rolls…once they come out of the oven, feel free to butter them up AGAIN.

No Knead Crescent Rolls 1 And then crack them open and slather some more inside.

You are gonna LURVE these!! Feel free to eat fourteen bajillion.

No Knead Crescent Rolls with Orange Cinnamon Honey Butter

Yield: 16 large, 18 medium


for the rolls:
1/2 cup warm water
2 1/4 teaspoons quick rise yeast
1 tablespoon honey
1/2 cup cold milk
1/4 cup butter, melted
1/3 cup granulated sugar
1 egg
1/2 teaspoon salt
3 3/4 cups all purpose flour {give or take 1/4 cup}
+3 extra tablespoons melted butter

for the butter:
1/4 cup softened salted butter
1/4 cup honey
1/8 teaspoon cinnamon
2 teaspoons orange zest


In a liquid measuring cup, stir warm water, yeast and honey together. Set aside to proof. Melt butter in small bowl and stir in cold milk to make mixture luke warm. Pour foamy yeast and water mixture into a large bowl with milk, butter, egg sugar and salt. Stir together to break apart the egg. Using a wooden spoon, stir flour into mixture in 1/2 cup increments. After it is incorporated, bottom of the bowl should be pretty cream and mixture should be pretty sticky but be able to hold a loose ball shape. Grease bowl and dough, cover with plastic wrap and dish towel. Set aside to rise 1-2 hours. Punch down dough and divide into two equal pieces. Flour a clean work surface and one of the halves. Roll out to be a 12-14 inch circle. Brush with 1 tablespoon of melted butter. Cut like a pie into 8 or 9 equal triangles. Roll into crescents. Place onto parchment paper lined baking sheet. Repeat with other half of dough. Brush tops of rolls with remaining tablespoon of melted butter. Cover lightly with plastic wrap and rise 30 minutes or until almost double in size. Bake at 350 degrees for 12-15 minutes or until tops have browned. Remove from oven to cool and immediately brush with more butter {if desired}. Serve warm.

For the butter-mix all ingredients together until incorporated. Serve with warm rolls.

    I am so with you on the subject of laundry. There’s only two people in my house – how can we produce such an endless stream of dirty clothes? You definitely need lots of carbs after doing laundry. Especially carbs slathered with some orange cinnamon honey butter.

    i made these last week and they turned out great! super easy and they were perfect with the stew i made. the orange butter wasn’t so great with the stew, ha ha, but i’ll be making these again…soon! and you know, without the stew so i can love on that orange butter. :)
