Mini Lemon Loaves

Well, after 13 hours of traveling, I am exhausted but I am home! So, this is going to be a really short post.

It took me lots of trial and error to get this recipe right…but I GOT IT and it’s delicious. SO YUMMY. Light and fluffy cake with a hint of vanilla and lemon. It makes the perfect light dessert or snack 🙂 AND, they are mini loaves! So cute. I found my mini loaf pan at Walmart so you should be able to find one in your neck of the woods.

Mini Lemon Bread

Mini Lemon Bread is a light and fluffy cake with a hint of vanilla and lemon. It makes the perfect light dessert or snack

Ingredients

Instructions

  • Preheat oven to 350 degrees. Spray mini pans with non stick cooking spray and set aside.
  • In large bowl, cream butter and sugar until light and fluffy. Stir in eggs, vanilla, lemon zest and sour cream. Scrape sides and mix again. With mixer on low speed, incorporate all dry ingredients until just combined, then stir in milk. Scrape sides and mix a few more times by hand. Spoon batter equally into prepared pans. Bake 15-20 minutes or until edges are golden brown and are baked thoroughly- use the toothpick method to see if they are done. Mine were done at 18 minutes.
  • While lemon loaves are baking, mix ingredients together for glaze and microwave on high for 2 minutes, stirring every 20 seconds or so to dissolve sugar into lemon juice. The glaze is done once the sugar has dissolved.
  • Once loaves come out of the oven, cool at least 15 minutes before removing from pans. Spoon glaze over loaves and continue to cool completely. Store in air tight containers until ready to serve.

    Absolutely delicious!! I made this to add to my cookie boxes as I wanted something to set off the standard Christmas cookies. I will definitely keep this one!

    I baked these in an Emeril Lagassi air fryer/oven because we are in Florida right now (we are snowbirds) in an RV resort and I despise my propane fuel gas oven. So I am still trying to figure out how to use the air fryer/oven as compared to a regular size oven. I used individual foil mini loaf pans that are 5 3/4” x 3 1/4 inches. I only filled 4 loaf pans. I looked up the loaf sizes on the Wilton loaf pan; they measure 3.28”x2.5”. So if people are using the foil pans and want 8 mini loaves they should double the recipe. I just took them out of the oven, can’t wait for them to cool so I can try them out. Want to use the recipe for Xmas gifts if they taste as good as they smell and look!🍋🍞

    Hello. I tried this recipe over the weekend. One of the best recipes I ever tried. I always had issues with the lemony taste and how sometimes it comes to taste like rust.. but not in this recipe. Even the glaze is awesome, I was too afraid to try it but it was really yummy. It filled my pan perfectly not a drop wasted. Thank you thank you for this very easy recipe.
    One thing: do you think I can add some blueberry?

    I just made these tonight and these are amazing! I used yogurt instead of sour cream since it was what I had on hand, and had to zest three lemons to get to 5 teaspoons, and baked it for almost 20 minutes. And perfect results! Texture is lovely, there’s that wonderful zing of lemon flavor in a cakey loaf with a hint of vanilla sweetness. Really perfect. Thank you for the terrific recipe. (And it was the first time I have ever zested a lemon!)

    Hi, what size are the mini-loaf pans used here, please? This is a great idea for making some little cakes for a sick friend. I need specifics as I am not a good enough baker to figure out pan sizes or compensate otherwise in the oven. I learned, to my frustration, that mini loaf pans come in different sizes, some almost ridiculously small. Too small for me. I’ve been looking for a size used in many recipes by a cookbook author and can’t find them. Walmart is rather a trek, but depending on size you found, might be worth the effort for me to get there. 🙂

      There were no measurements on my loaf pan that I used. It’s a pan, similar to a mini muffin tin, but with 8 mini loafs in it. The brand is wilton. Hope that helps!

        Yes, thanks, it does. It’s always helpful to get particulars such as pan sizes, microwave wattages, slow-cooker sizes, etc. Wide variety. I found the pan you described on Walmart site (tho not on Wilton site). I realize not everyone cares, but for those who do, the overall product dimensions are given as 16.06 x 10.12 x 1.57. No indication of the size of each loaf cavity. I estimated each loaf would be about 4×2.5 or so. A tad small for my current purposes. Someone else posed my question, “What are the individual mini loaf sizes in this pan?” on the product page and another person offered this response: “I do 3D modeling, if I put the overall dimensions into a modeler and scale the picture to match it, I can querie for unknown dimensions. Each loaf is roughly 3.5″ long x 2.25″ wide x 1″ deep. (I am looking for some smaller than this that my wife wants to replace.) –By jettray – Wichita, KS”

        I am curious, though. This kind of pan with eight loaf cavities (versus individual small loaf pans) offers a certain convenience for getting pans into oven. I do like that, but wonder about removing eight loaves. LOL. How did you get them out without breaking them? These are bigger than cupcakes, so upending the pan seems risky. Yours look lovely.

    Lauren, you know as soon as I send a question I’ll be darned if I don’t find the answer and feel stupid for asking ! I just noticed 8 mini at the top of this post. The recipe I found on PW doesn’t show that. I love lemon and now I can make these in the morning. I’m going to take some to our new neighbors as a welcome !

      So easy and simple. I added a handful of fresh blueberries ,very colorful. These . make perfect birthday or Christmas presents I even made mini cupcakes.
