Maple Mousse Cheesecake Tarts

Aaaaaaand, the sugarfest continues. Seriously guys. I cannot be stopped. See here if you don’t know what I’m talking about. I’m a bit of a maple addict. Growing up, my parents bought maple syrup from Costco by the vat. When I was in college, they’d ship me real maple syrup because the fake stuff wasn’t cutting it for me. Even the real stuff sometimes didn’t taste quite like the Canadian versions. So, after buying {several large} bottles of maple syrup from Costco, I decided to make a maple tart that is sort of like a cheesecake, sort of like a mousse and all around awesome. I didn’t have high hopes for this one at first, but seriously fell in love after one bite! Creamy, light, cold and sweet with a little crunch from the walnuts….it’s what dreams are made of.

Well, my dreams.

Am I the only one who dreams about really freakishly scary stuff or food? There’s nothing in the middle. Just straight up craziness or me making and shoveling food into my mouth. Ahhh, gotta love my psyche.

Which reminds me: when I entered that Good Morning America recipe contest that I won back in the day, the producer asked me how I came up with the recipe. I told him that I dreamt about it and he laughed. Legitimately laughed for a good 10 seconds.

He was a nice boy.

Not.

But, that’s honestly how I came up with that recipe {and at least 15 other recipes on my blog}. I have a strange gift.

Oh wait! One time I dreamt that my sister thought I was having an affair with my ex boyfriend from high school. That’s semi-normal! Well, kinda……never mind.

ANYWAYS, what I’m trying to say is that I’m weird. Accept it and move on.

Also, make these. Angels will sing. Here’s how you make them:

Maple Leaf Cookies from Trader Joes

Start out with some of these babies! LOVE these cookies. I got these at Trader Joe’s, but you can buy a similar version by Dare.

Maple Leaf Cookies

This is what they look like. Aren’t they cute? I love ’em! 🙂

Crushed Maple Leaf Cookies

Grind up the cookies into crumbs and stir with some melted buter.

Tart Crust

Press into 4 small tart pans and refrigerate.

Cheesecake filling

For the filling, whip some cream up and set aside.

Now, whip up some cream cheese with

Vanilla

some vanilla,

Maple Syrup

real maple syrup, and some other stuff I didn’t take pictures of. Cause I’m just smart like that. {Sour cream, maple extract, sugar}

Mousse Cheesecake Filling

Whip everything together until light and fluffy and then fold in the whipped cream by hand.

Spoon the filling into the tarts, refrigerate a few hours and then top with a few walnuts for garnish. That’s it!

Maple Cream pie

Real maple syrup is the delicious secret in this Maple Cream Pie! Plus cookies from Trader Joe's. Perfect for the Fall season!

Prep Time 20 minutes
Cook Time 0 minutes
Total Time 1 hour 20 minutes

Ingredients

  • 8 maple sandwich cookies
  • 2 tablespoons melted butter
  • 3/4 cup heavy whipping cream
  • 8 oz softened cream cheese
  • 1/4 cup real maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon maple flavoring
  • 3 tablespoons granulated sugar
  • 1/4 cup sour cream
  • walnuts for garnish

Instructions

  • Place maple cookies into the bowl of a food processor and grind into crumbs. Stir together with melted butter and press into 4-4 inch tart pans and refrigerate.
  • In a large bowl, whip cream. Set aside.
  • In another large bowl, whip cream cheese with maple syrup, vanilla, maple flavoring, sugar and sour cream until completely smooth. Be sure to scrape sides and whip again to ensure filling is completely smooth. Fold in whipped cream and spoon into chilled tart shells. Refrigerate 1-2 hours to set {or longer} and top with walnuts for garnish. Serve cold. *Lauren's Latest Original Recipe

    I have made these several times and they are simply the best. This last time I used 1/2 digestive cookies and 1/2 maple cookies – to cut down on the sweetness (and I might have ate 1/2 the bag of maple cookies the night before.) My dad makes the homemade maple syrup and with this recipe – heaven in a cup!

    Yummy! You know a little trick I learned that makes those types of deserts easier is that you can whip the cream cheese a bit and then add the heavy whipping cream right to it to whip. No folding and it is smooth!!!
