A little sweet, a little sticky, and a little tangy! This Oven Roasted Chicken has got all the flavors I love: maple, garlic, lemon, and more!

Well, Valentine’s Day 2016 will go down in history as the day Blake shoved a lego up his nose.

Our evening started out as any other evening would start. Bedtime routines were getting done and our kids were heading to bed when we heard blake call out in a panic “I need helllllllp! I need hellllllllp!”

My husband and I looked at each other and both thought “that’s odd“. So Gordon being the strapping young and strong Dad he is headed to the other end of the house to investigate whilst I nursed our 2 week old baby. What ensued next was somewhat troubling yet extremely comical. Phrases like “wait, what did you do?” “where is it?” “why did you do that?” and “oh geeze” and “hold still” accompanied by loud “can’t get it out” Blake screams had me somewhat alarmed but again, I was chuckling because I didn’t quite know what was happening.

When my husband brought our darling 2 1/2 year old out to the living room, I never in a million years thought he was going to say “he stuck a lego up his nose”.

Suddenly the whole “can’t get it out” screams made complete sense.

After a quick google search, I realized many-a-boy shove legos up their noses. {To all those mothers: I feel your pain.}

After a quick gander at said lego up Blake’s nose, we realized that we wouldn’t be able to get it out ourselves because it was completely STUCK. So, at 9:30 Valentine’s night, Gordon brought Blake to the ER where they lightly sedated the boy, numbed him up real good and got the lego out of his nose. Hallelujah.

By 1 am they were home again and boy oh boy delirious Blake on drugs is HILARIOUS. So, we enjoyed him for a hot minute before sending him back to bed, sans nose lego.

And now, he is thoroughly traumatized about anything going into his nose, so I suppose it’s safe to assume–>lesson learned.

In other news, I like simple food. Is that news? Probably not.

I also like hella complicated food too {but I rarely make complicated food.} Roasted chicken is simple food, but when done well is glorious.

This chicken recipe is divine and super simple to throw together. I don’t make roasted chicken very often, but when I do, my little family of 4 {…or I guess now technically 5} devours it with zero leftovers.

I forget how delicious and easy to make roasted chicken is but by golly, from this point forward, I need to remember THIS chicken. Because THIS chicken? Is the bomb.

I get my butcher to cut a whole chicken up into pieces {it cooks quicker this way!} and then marinate said pieces in an olive oil-maple syrup-garlicky sauce. Then I bake with lemon and onion for more flavor and enjoy!

The chicken turns a gorgeous color and gets a little sweet and sticky from the maple syrup plus a little tangy from the lemon! It’s pretty dark tasty fresh out of the oven with that crispy skin!

Oven Roasted Chicken

A little sweet, a little sticky and a little tangy! This Oven Roasted Chicken has got all the flavors I love: maple, garlic, lemon and more! Simply marinate and roast. An easy and delicious recipe my family devours!

Cook Time 45 minutes
Total Time 2 hours 45 minutes

Ingredients

marinade:

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon mrs. dash garlic and herbs seasoning
  • 4 cloves garlic minced
  • salt & pepper
  • 1 whole chicken cut into 8 pieces
  • red onion
  • lemon slices

Instructions

  • Place all ingredients for marinade into a small bowl and whisk together to combine. Pour over chicken pieces and refrigerate 2 hours {or up to 24 hours}.
  • Preheat oven to 425 degrees. Line baking sheet with lemon and onion slices. Place marinated chicken overtop lemon and onion. Brush or spoon over marinade to coat chicken really well.
  • Bake chicken for 40-45 minutes or until thoroughly cooked. Serve hot.

    I cannot get over this recipe. It was sooooooo easy to make and the chicken is so delicious! I never thought I would be good at making roasted chicken. This recipe was the first time I tried cooking chicken that wasn’t a boneless skinless pre packed piece, lol. And now I make this like once a month!
    It’s also fancy looking and I make it for guests to show off, haha! Thank you for this recipe!

    I had to laugh at this story, as I remember giving my now-twenty-three-year-old daughter a bath one day, when she was about five, and realizing she had a blue marble stuck in her nose! And I mean, it was STUCK! Took her to the ER, and they removed it, of course, but oh, what an ordeal! At least Blake asked for help. My girl never said a word lol! Trying this recipe tonight. I’m sure it will be a hit, as I have yet to try one of your recipes that wasn’t!

    This story cracks me up! It’s safe to say that little girls shove barbie’s glass slippers up their noses too. Gracie did that when I was pregnant with Eden a million moons ago. She woke me up from a nap and I was like “Why would you do that!?” They never ever seem to have a good answer for this. Save this story for when he brings a girl home. It’s a keeper!

    My 2 year old stuck up a bead up his nose shortly after my baby was born, too! Desparate for attention I guess. We plugged the other side of his nose and puffed a quick breath into his mouth and the bead popped right out! It was like magic! That chicken looks AMAZING. I wondered about putting maple and lemon together in the same recipe, but if you say it’s good, it must be so! 😀

    When I was 4 years old I drank a bottle of Tigress perfume and ended up in ER to have my stomach pumped. To this day I can not stand the smell or even see a bottle of it! Congrats on your new little guy.What a cutie! Great chicken recipe too.

    I remember the old up the nose trick……My husband was out of town, my daughter was 3 months old and my 2 1/2 year old stuck popcorn kernels up his nose, BOTH SIDES!!! One side slid out on its own, I could see the other side still stuck. Then it dawned on me that I didn’t know how many were up there. Quick trip to the ER with 2 kids was awesome (not really). Still have the kernel tucked away with the hospital ID wrist band as a souvenir of that wonderful night!

    Sorry to hear about the Lego, but at least they got it out. My son put one in his ear and we went to the ER too for it to be removed. He has since not put anything in his ears. I feel ya.
    The recipe looks delicious and though I will leave off the lemon because I am allergic, it will still be awesome! Have a great day and enjoy your kids and baby snuggles!

    Reminds me of the time I heard my 2-year-old cough quietly. I asked, “What’s wrong, Kathy?” and she said, “I ate the penny”. My husband had told me that pennies dissolved instantly in stomach acid and poisoned the child with zinc, so I totally panicked. Of course, it came out fine (2 days later), after x-rays, etc.
