Homemade Microwave Popcorn

Sorry this post is a little late, but I’ve been busy being sick {aka hunched over a toilet bowl barfing my brains out}. Sorry to give you that visual, but it’s where I’ve been. I really wish I hadn’t been there, but ya know. Can’t really control getting food poisoning or the stomach flu or whatever I had to make me so sick. My little one was confused and concerned when trying to explain the concept of ‘throwing up’ to her yesterday morning. Also, the ever growing baby in my belly did not like the sudden tensing of ab muscles while the throwing up-ness occurred. That hurt like a mother. So did the clear liquid diet that followed. There’s only so much water/tea/Sprite/chicken broth a girl can drink. I took a chance and had some dry toast too. It all stayed down, thankfully and I haven’t thrown up since Tuesday night/early Wednesday morning…so fingers crossed I’m almost completely healed. Can I get a hallelujah?

I’ve decided I’d rather be sick with a cold for a month than throw up once. Colds are completely manageable and I can still get regular daily activities completed. Stomach bugs….not so much. My 3 year old became buddy buddy with the iPad. And the tv. At one point I was desperate for more Sprite, so I drove to Fred Meyer, dropped my daughter off at the kids play area, bought my soda, found a couch and just sat for an hour and sipped my drink. I had lost all my energy and gotten light headed from the soda aisle to the cash register and probably looked pale and pathetic, but I didn’t care. And I may have fallen asleep for 15 minutes on said couch at Fred Meyer. So embarrassing, but I don’t even care. That’s how you know I was really sick.

So, this recipe was supposed to go up yesterday, but I didn’t really make it to the computer much. So here ya go. Popcorn for a Thursday. This is a simple recipe for microwave popcorn to make at home minus all the chemicals and things that I don’t particularly like eating all the time. Much more economical and you can customize it to how you like it. All you need is a paper bag or glass bowl and 2 minutes! Oh, and happy anniversary to my sweet and wonderful husband! We’ve been together 5 years TODAY! To think we made it almost 5 years without him having to clean up my puke…until yesterday. That is true love right there.

Homemade Microwave Popcorn

Yield: 2 servings

Prep Time: 3 minutes

Cook Time: 2 minutes

Total Time: 5 minutes

Ingredients:

1/4 cup popcorn kernels
1-2 tablespoons melted butter
salt

Directions:

Pour kernels into a plain brown paper bag. Crimp/fold the top of the bag over itself and place on its side in the microwave. Cook on high for 2 minutes or until the popping slows to 5-7 second intervals. Remove from microwave and toss with butter and salt.
