Fried Eggs & Sweet Potato Hash

Let’s talk about this Sweet Potato Hash… But first, let me tell you about my husband and me.

My husband and I are a pretty well-matched couple. There are very few things that my husband and I disagree on. And you lucky people get to read all about our trivial arguments and choose whether or not I’m right! {Answer: I’m always right.}

1. Watching scary/sad/thought-provoking/war movies. I don’t want to hear how “it’s not that bloody” and how “so-and-so will become triumphant in the end and overcome the odds”. Just pop in the romantic comedy and get me some popcorn.

2. My hair. I wear it long and rather enjoy it long. You, my dear, sweet, bald husband want me to chop it off and have it short. YEAH. Not gonna happen, honey….unless…..

3. You grow your hair and style it the way I like………

Just as I suspected. Not gonna happen.

4. You like fry sauce. I detest fry sauce. How is it a good idea to dip your deep fried potatoes into a mayonnaise-based sauce? I don’t understand. Ketchup ALLTHEWAY.

5. You cut a grapefruit like a boy. I cut mine like a girl and segment it out so it’s easier to eat. Do you recall that we don’t own special grapefruit spoons?

6. You like fried eggs brown and crispy with the yolks completely cooked through. I think you are crazy. Also, cooking eggs like this should be illegal. How can anyone resist a runny yolk? I mean….HELLO:

Moral of the story: I am right. And I am right.

Also, everyone and their mother should make this pronto. SO so good, guys!! And pretty simple too 🙂 Sorry no step by steps today…my sister was visiting me this last week and I’ve been galavanting with her.

Sweet Potato Hash with Fried Eggs

This Sweet Potato Hash topped with a delicious, runny fried egg is everything you want and more in a sweet potato breakfast hash.

Prep Time 10 minutes
Cook Time 20 minutes

Ingredients

  • 2 slices hickory smoked bacon
  • 1 tablespoon olive oil
  • 1/2 cup yellow onion diced
  • 1 small jalapeno seeds removed and diced
  • 1 small sweet potato peeled and diced small
  • salt & pepper to taste
  • 1/2 tablespoon butter
  • 2 large eggs

Instructions

  • In a cast iron skillet, cook bacon until crispy. Transfer to paper towel lined plate and pour off the excess bacon grease out of the pan.
  • Pour in olive oil and saute onions, sweet potato, jalapeno, salt and pepper until sweet potatoes are soft and everything has browned nicely, about 8-10 minutes. Chop bacon into smaller pieces and stir into hash. Remove from heat and set aside.
  • In a small nonstick skillet, melt butter over medium low heat. Crack two eggs into the pan and sprinkle with salt and pepper. Cook slowly until whites are cooked completely but yolks are still runny. {Feel free to flip the eggs to cook faster.}
  • Divide hash between two plates and top with one fried egg each. Serve immediately.

    This has turned into one of my favorite go-to breakfasts for me and my hubby. It’s fresh, healthy, fast and soooo delicious! What a knock out!

    Oh, husbands just don’t get it! I won’t even get started on the citrus cutting actions. He went to bartending school and mixes drinks for fun on the weekends–he has his way of cutting the citrus for garnishing, and feels my methods of cutting them for eating is wacky. I am the same way with the movies. I don’t really care for “scary/sad/thought provoking/war movies” unless they include my favorite “actors with accents,” then…MAYBE. Yeah, he makes fun of my man crushes, he says I have a thing for men with accents. (So maybe I do…c’mon…Gerard Butler, Hugh Jackman…Chris Hemsworth…)

    On another note, I LOVE runny yolks for breakfast, and luckily the husband agrees <3 This hash looks amazing, I must make it soon!

    I do sweet potato hash browns/ country potatoes a lot lately. i make mine with garlic and onion and use chili powder and salt. Also I would add you could just use some of the bacon grease to cook the potatoes in, i mean why let all that good flavor go to waste?

    I harvested a huge amount of sweet taters this year and wondered about hashbrowns… so I found your recipe and WOW were they great! We usually just do sweet potato pancakes and roasted sweet potato fries, but I can see hashbrowns in our plans from now on! Excellent recipe and thanks for sharing!

    this is our go to meal whenever i don’t feel like cooking! we usually add kale or spinach too but this is total comfort food for me!! (and yes, runny yolks all the way!)
