Crunchy Almond Maple Glazed Chicken

By the time you’re reading this, I’ll be in Portland with my two loves renewing my permanent residency! Wahoo! I’m Canadian and after marrying my husband {an American} I had to become a permanent resident. I could become a citizen but I thought it might come in handy incase we decide to move to Canada for whatever reason and because I like being Canadian 🙂 So, here’s a shout out to all my Canadian peeps!

So, this chicken recipe came about on Monday when I had no energy to do anything! Usually the mornings are great and I have energy to spare but right around 3 or 4 pm, I just get so tuckered out! Running after a toddler probably has something to do with it! Anyways, looking through the pantry of ingredients I had, this is what I came up with. Sometimes, that’s when the best recipes get created! Everyone who had a piece of this chicken certainly was licking their plate clean! YUM! AND, with only 5 main ingredients, this dinner is a cinch to put together!

I bet most of you have these ingredients at home on hand already, so you can jump on into the kitchen and make a quick and easy dinner–perfect for those mid-week ruts we all get into. Happy Wednesday, folks! 🙂

Ingredients

Directions:
Preheat oven to 375 degrees.
Line a baking sheet with foil and lightly spritz with non-stick cooking spray. Set aside.
Seasoned raw chickenCoat chicken pieces in 2 tablespoons melted butter. Place on baking sheet and sprinkle with salt and pepper.

Pour chex cereal into a food storage bag and smash into small pieces.

Chop almonds into small pieces.

Place crushed cereal, almonds, salt, pepper and 2 tablespoons melted butter into small bowl and stir to coat. Divide topping into 4 equal portions and press onto the tops of the chicken breasts to create a thick crust.
Bake 30 minutes or until chicken is thoroughly cooked.

Pour syrup and last 1 tablespoon butter into a small bowl and microwave until butter melts. Stir mixture with spoon to incorporate the melted butter into the syrup.

Right before serving, drizzle about 2 tablespoons of syrup mixture over each chicken piece. Serve warm.

Crunchy Almond Maple Glazed Chicken

This crunchy almond Maple Glazed Chicken has only 5 main ingredients and is a cinch to put together! Super yummy for any day of the week.

Ingredients

  • 4 chicken breasts or 2 large chicken breasts pounded out and cut into 2 -for a total of 4
  • 5 tablespoons butter divided
  • 2 cups Rice Chex cereal
  • 1/2 cup slivered almonds
  • salt
  • pepper
  • 1/2 cup maple syrup real or fake

Instructions

  • Preheat oven to 375 degrees.

    I am living with my parents right now and my mom told me I had to cook at least once a week….that seems fair. However, I do not like to cook AT ALL but I found this recipe and thought I would try it out. It was delicious!     Sounds like a wonderful recipe! We are going to try it but will probably make at least one substitutions… pork chop instead of chicken because hubby is allergic to all poultry. and to think we still have a gallon of maple syrup left from last year. Thanks!
